Notes about the shift in general:

 it was a day to say the least. i spent the opening doing a lot of paperwork, because of this, i was not able to do a lot by way of set up. they did fall behind on making house pies. we had pies in the window for open but no back ups. the 10:45 order, pushed them back a bit, but we worked on getting the other pies made. Pedro did well keeping up on roto and will handled marsal well, and helped out on roto when he could. Once I finished with inventory I started running breaks. We had a pretty steady flow of business. Stayed relatively slow. I put Leo on some cleaning tasks and he did a bit of prep on his station. The shift stayed relatively slow after that. Small pop on salad sandwich but it was a good shift overall

2. KMOD stuff:


Came in early to get inventory done. I had to pause to get the scrub dine, but all was successful and dine by about 12 or 12:30.
Houston deli was put in
Small produce order 


3. Food stuff:

XL dough seems a bit firm today even once if warms off. It bakes well and tastes great but definitely harder to pound.might just be the 4 day but we've got quite a bit of it today

Keep an eye on tomatoes. Still coming in a bit green but just a few per box

Keep an eye on cheesecake out dates

Dough/Dish:Gerardo got dough done. Not much of a list but we got the kits done

Prep: alisnaidis didn't finish her list but everything major got done

Z1R:Pedro held down roto most the shift. Not much by way of whole pies today. He did some cleaning today above expo

Z3R: Will stayed up front and helped out where needed. He did do some containers of cherry peppers through the shift

Sub/Salad: Leo stayed busy with cleaning tasks. I'd like us to remember to clean above appliances more. He cleaned above the hot boxes and the baby oven. Both had a thicker layer of grease on them

8. Repair issues:

One of the pray jets were missing on the dish washer and we noticed pretty early on. Nick came in he got us a new one as well as a back up. There was also an issue with the gasket flap at the bottom of the dishwasher. He changed that out as well. All is well. He advised us not to clean the dish jets the way victor had previous informed us as that could lead to more damage over time. Instead we should remove the end caps and use a thin stick or pipe cleaner to clean it out.

The stuff about the stuff:  

All BOH Managers are officially Management certified. Cynthia tool all certs in to be approved by city of Houston and I've got them laminated and posted on the cooler up front

Notes for FOH:

Things seemed to operate well up front, things were smooth and communication was on point
