THURSDAY 4.17.25 BOH AM WILL
Notes about the shift in general:
Another solid shift. No deferred orders, but a substantial amount of walk up and tablet orders, all stations were going from the start. 11:15-12:15 was booked solid for pizza. On top of that we had a large group roll up and demolish slices. It stayed busy until about 2pm, at which point it was breaks, finish prep, and some ceiling cleaning for dough team. At 3:30 we started filling up Marsal for the p.m. We cooked 25 cookies this morning, but after the lunch rush it looked low so I cooled the oven and cooked another 10.
