Notes about the shift in general:  On the way in I stopped and picked up more string lights for the patio. We found out that the outlet is causing the string to burn out. Bailey and Ryan were able to rearrange the sequence of lights and it is working for now. When I arrived the recycle dumpster was closed and locked. I completed the truck order for tomorrow today. I am off tomorrow and I will only be in for a short while. I walked the store looking for R&M. The shift was steady with nice pops at Marsal and whole pies. Early in the shift there was a little confusion on a pie that the guest requested no cheese and somehow the guests thought that the cashier told her that there was cheese on the pie. Ryan and I looked into the situation and we found that there was no cheese on the pie. The guest was satisfied and left happy. Breaks started at 6:30 p.m. and ended at 8:00 p.m. All BOH team members were able to take breaks.

Sicilians had a good rise baked off nicely. The dressings were good in the afternoon. The second caesar dressing pulled during the evening was slightly off in texture, so it was replaced.

Notes about the shift in general:   Starting my day when I entered the restaurant, everything looked pretty good, so I started with the preparation list. Then I counted the doughs, while Juan Pu was filling on the line, from there we started with the preparation, Then we got a ticket for 16 medium pizzas, I wanted it at 11:30 so we hurried and started on all the pizzas in front around 10, when we finished we started with the order, then a lot of sandwiches also came out, so we were working as a team and everything went pretty well, the pizzas came out on time as well as the sandwiches, and around 12 I started with the break and we managed to finish around 2, from then on if quite a few pizzas came out to go. Notes about the shift in general:   starting my day entering the restaurant, everything was fine and when we entered we had a lot of merchandise so we started to upload everything and arrange them around 8:30 Houston avocado arrived I checked them and made sure everything was in pretty good quality and I arranged them and gave them a date then I started with the preparation list and delivered it to each station and refilled meanwhile I helped Gerardo with the bread knots when I finished then I helped them with the preparation and around 10 we started with all the pizzas when it opened we didn't have any tickets so I started with the breaks but starting at 11:30 we had an attack of quite a few tickets and we got a ticket for 11 Pizza and others we were in a good movement from 11 until two and from then on it was a little calm so we took advantage of the time to make two Cher Pepper and also finish with the preparation that we had left, already at around three we started to refill De...
