SUNDAY 8.3.25 BOH AM WILL

Notes about the shift in general:

Solid close. There was a decent amount of prep for all departments. I helped Jose with garlic knots. Juan helped with line prep and to stock marsal for the day. It felt like a slower day because there were no large pops, but it was steady all day. We cut Evan after breaks and prep were done at 2pm.


Next shift be on the lookout for:

2. KMOD stuff:

Evan's oldest brother died yesterday. Evan worked normally today, and only seem to get upset when he told me what happened, but also still seemed to be a mainly in shock/disbelief. I have adjusted the schedule to remove his shifts for this week per his request.

Raymundo did everything himself today. He came in and immediately took initiative, started on cheese, and had knocked out that plus pizza sauce and cut cheesecake before opening. He was done with all assigned prep by 3:30pm. Juan, Ronaldo, and I all checked in with him, so far he's doing well. Please let me know if there is any prep quality related feedback so we can follow up with him. 

Raymond and Charles got us set up with DiMare for produce. I went through and compared prices, made a list of everything available at a better price from DiMare, also listed items missing from the price guide, I made sure Ronaldo knew how to log in and let him know I would do a weekly price break down to check before ordering. I went ahead and put in a small Houston Avocado order for tomorrow with items that are still cheaper through them.

3. Food stuff:

Good rise on Sicilians today, perfect looking and tasting house pies, dressings were on point, and sauce tasted correct. 

For a few weeks we have had an issue with Caesar dressing breaking if it is stored for more than a day or two. This has been an issue with dressing made by Leti, Leo, and Evelin alike. I have discussed with all of them that breaking is typically an issue with how fast oil is being added to the dressing when making it, and that it requires going as slowly as possible to properly emulsify. I watched Evelin make it this morning and she did add the oil extremely slowly. The odd part is we did not have this problem with this dressing before, and all three were making Caesar that held well. We did have to toss yesterday's Caesar in favor of today's.
