SUNDAY 9.7.25 BOH AM WILL

Notes about the shift in general:

Another steady day shift. After getting set up for the day, I helped Jose knock out garlic knots and set up the pizza line. Evelin helped me do some line prep so that when Pedro walked in at 10am he could just focus on house pies. Once Ronaldo was up front, I ran to pick up Spring Mix, Rainwater, and Topo Chico. We would have normally had enough Spring Mix, but we had a deferred order for 3 family pear gorganzolas and I wanted err on the safe side. There was a 12-pie deferred for 3:30pm that went out on time. Everyone took breaks. Cynthia did Fredy's orientation and I set his training schedule for the week. Smooth shift.


Next shift be on the lookout for:

Check that deliveries are complete, check produce from Houston Avocado, and keep an eye on Pepperoni. We should have just enough, but it will be close.

2. KMOD stuff:

Apparently Juan found another job, in the PM, and he is already on their schedule. Ronaldo told me this information first, then Juan. I asked him why he wouldn't just tell his new job that he was already scheduled for this week. He didn't have a good answer for me.


Pedro is covering the p.m. portion of his shift today. I covered tomorrow by having him trade with Juan Carlos, Monday for Tuesday. Ronaldo is willing to cover Wednesday, but any other move will add to OT.


3. Food stuff:

It was 68 degrees in the building this morning so Sicilians had zero rise. I put them by the warmers with the door open to accelerate growth. The first batch was passable, after that they came out nicely proofed. While Caesar has been holding better when stored in the back fridge, it is still freezing and breaking on the rail. I have been raising the cooler temp, 2 degrees yesterday, 2 more today to see if we can hit the right temp, but we definitely want to start storing what's normally held on the line in the cooler.
