Notes about the shift in general: When I arrived the recycle dumpster was closed and locked. When I entered, I met Cynthia to get caught up on activities while we were out. A few staffing changes are in the works. For the BOH, Diego will not be retained past his probationary period. His attendance and performance was documented and reviewed with him, but has been little acceptable change. The PFG truck order was entered. I contacted a second vendor as a potential service provider. The shift was slow even for a Wednesday. Breaks started at 6:30 p.m. and ended at 7:45 p.m. All BOH team members were able to take breaks.
Next shift be on the lookout for
We picked up a deferred order for 10 piese at 11:15 a.m.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH
