Notes about the shift in general:

We received orders from BEK and Houston Avocado this morning. Everything checked out. Only one 3-pie deferred for 6pm. We did receive several larger orders in the first hour. Salad/sandwich stayed busy for most of the lunch rush. Slices were steady. We cooked off two batches of bread this morning. Leo took initiative and cleaned the trash cart area. It was a slower shift so Dina, Juan, and Leo all went home early. I took Diego off next week's schedule and made sure we would be fine without him.


Next shift be on the lookout for:

Produce from DiMare. Their lettuce quality has been subpar.

2. KMOD stuff:

Danilo will cover dish for the first part of his shift tomorrow while Meredith finishes tiramisus. Meredith was feeling ill on Monday and unable to come in to do deserts. Thursday was the one day where we had a body to spare that would not result in additional OT.

3. Food stuff:

Good looking and tasting sicilians and house pies. Dressings tasted right. Bread baked off perfectly, which with 2 batches isn't always the case.

Notes about the shift in general:   starting the day, it was a little slow so we were finishing up with the preparation and we also made cherry Pepper, when those from the afternoon came in. Notes about the shift in general:   starting my day when I entered the restaurant, everything looks pretty good so I started with the preparation list and delivered it to each area and also today the new one who works in preparation showed up, I already told Dina to teach her well, then we started to fill in the line, just like nine Houston avocado arrived I checked them it looks pretty good and then I arranged them and set a date on them and then we got a ticket for two pizzas for 10:40 and others but it was not until 11:30 so we started with all the pizzas, in front when it opened everything was ready if enough tickets came out, so I started the breaks from 12 we managed to finish around two, meanwhile I was in front, if a lot of Pizza Slice was sold, as well as Pizza to go all day, we were always on the move and also finishing some preparation that we had pending, already at three we started to fill in front, since if a lot of slices were sold, when they came in The afternoon te...

10/10/25 Friday Mid w/Raymond

Notes about the shift in general:  When I arrived, I arrived the dumpster was closed but not locked. It looks like someone was trying to brake the lock again. I am not sure what is so interesting in our dumpster. If the lock takes more damage I will have to change the lock for the third time. It was a good close with all stations clean and organized. I started the prep lists and past them out. There were no deferred orders for the day. I reviewed the credit tracker and went over the outstanding entries with Delmy and Charles. I reviewed applications and selected a few for interviews. I met with the representative from Chefwarehouse. He informed me that they were purchased by Hardie's. I informed him that we are not adding any other vendors at this time. It was a slow sales day for Friday Ryan and I met with Diego and went over his dismissal from HSP.
