WEDNESDAY 10.8.25 BOH AM WILL
Notes about the shift in general:
We received orders from BEK and Houston Avocado this morning. Everything checked out. Only one 3-pie deferred for 6pm. We did receive several larger orders in the first hour. Salad/sandwich stayed busy for most of the lunch rush. Slices were steady. We cooked off two batches of bread this morning. Leo took initiative and cleaned the trash cart area. It was a slower shift so Dina, Juan, and Leo all went home early. I took Diego off next week's schedule and made sure we would be fine without him.
Next shift be on the lookout for:
Produce from DiMare. Their lettuce quality has been subpar.1.How many pies did we run on the timesheet?
4 across the board2. KMOD stuff:
Danilo will cover dish for the first part of his shift tomorrow while Meredith finishes tiramisus. Meredith was feeling ill on Monday and unable to come in to do deserts. Thursday was the one day where we had a body to spare that would not result in additional OT.3. Food stuff:
Good looking and tasting sicilians and house pies. Dressings tasted right. Bread baked off perfectly, which with 2 batches isn't always the case.4. Sales for the shift:
$26135. Labor for the shift:
People:
Dough/Dish: Gerardo/Jose

Z1R: Juan
Z2R:
Z3R: Pedro
Z1M:

Notes for FOH: Communication was excellent, slice running was prompt, shift was righteous.
