FRIDAY 4/24/2026 BOH PM RONALDO
Notes about the shift in general:
The start of the day was extremely hectic. We had a very heavy workload. We focused on getting everything finished—the tickets just kept coming—but by working as a team, everything went quite smoothly. By 3:00 PM, we began stocking up on pizzas for the front display in preparation for the 4:00 PM rush, when the evening shift arrived. I took that opportunity to place the order for the Houston Avocado supply needed for tomorrow, and I also spent some time organizing the walk-in cooler for vegetables. We went back to restocking the front display with more pizzas, as we had a large order for 16 pizzas scheduled for around 6:00 PM—though orders really started picking up after 5:00 PM. I had to ask for a little extra time to accommodate that large order for 6:00 PM; thanks to that adjustment, the entire order went out without a single hitch. I also took charge of coordinating breaks, covering for each person so that every member of the team got their downtime. Things were a bit slow at the salad station, so I assigned Lety to prepare the Pistachio and Walnut toppings; once they were finished, I went around checking to ensure nothing was missing. Ramona had a personal issue and asked if she could be excused to leave at 8:00 PM. I told her that was fine, as we were well-staffed and Danilo was already covering the front area. Today was Mateo's first day; he did an excellent job—he is absolutely superb at working the oven.
