SUNDAY 4/19/2026 BOH PM RONALDO

Notes about the shift in general:

 The day started off quite well; we were constantly on the move, as we had a significant amount of prep work to do. We worked as a team to ensure that all the orders went out on time. Once we finished all the prep, we stocked up the front area with plenty of pizzas. When the evening shift arrived, I organized and arranged items in the vegetable walk-in cooler. I also placed the order for avocados from Houston for tomorrow. Afterward, I worked on the line, helping out and also checking on Noe’s progress; he is doing quite well—all he needs now is a little more speed, though he already knows how to make almost all the pizzas. Things got a bit busier starting around 5:00 PM, but thanks to our teamwork, there were no issues. Around 6:00 PM, I began covering for everyone so they could take their breaks. Once they were finished, I went around checking to make sure nothing was missing for the rest of the evening.

The dressings and pizza sauce have a great flavor. The pizza slices are nice and crispy—just like the Sicilian ones.
