Notes about the shift in general:

 The day got off to a pretty good start; we were constantly on the move and maintained a great pace. We spent some time on prep work, and then, around 2:00 PM, we started restocking the front line with plenty of pizzas. Once Lety left—around 3:00 PM—it was just Pedro and me left on the line. It actually worked out quite well, as very few tickets were coming in at that point. When the evening shift arrived around 4:00 PM, I took the opportunity to place the Houston Avocado order for tomorrow; I also did a bit more restocking on the line to ensure the morning crew wouldn't feel overwhelmed by the heavy workload expected tomorrow. I took my break, and when I returned to the floor, I helped out on the line by covering pizzas. Before leaving, Will mentioned that Noe wouldn't be coming in, but since the line was fully staffed today, it wasn't an issue. The afternoon went smoothly, with tickets coming in steadily. Around 6:00 PM, I started coordinating breaks so that the entire team could get their downtime. Afterward, I double-checked that everything was in good order for the evening shift. Evelin prepped extra sandwich wrappers for the weekend, and I also reminded the team to keep the line well-stocked, given the large order expected tomorrow.

The Sicilian pizza looks really good; the slices are huge. They are all nice and crispy. The toppings and the pizza sauce taste really good.

The back door could not be entered through because, when the code was entered, it would not open—since one of the numbers was no longer working—and for that reason, no one could enter or open the door.

Notes about the shift in general:  When I arrived, the dumpster was closed and locked. I stopped to pick up tomatoes due to the sharp increase in pricing. I walked the store and checked supplies before placing the BEK truck order for tomorrow. I called Republic again regarding their not picking up recycling. I was informed that one of their drivers called off and that impacted a number of routes. They will pick up tomorrow. I called our Houston Avocado Rep and we discussed price corrections on tomatoes and when we could expect to see them. At this time they anticipate that pricing should get back to market norms in 1-2 weeks. In the meanwhile, I will continue to purchase 4X5 tomatoes from HEB at significant cost savings. The shift started slow and then picked up at 6:00 p.m. Both the Roto and Marsal lines did well during the pop. Notes about the shift in general:   starting the day, it was a little slow so we were finishing up with the preparation and we also made cherry Pepper, when those from the afternoon came in. And Fredy today, which is his first day, I started showing all the areas, we took a tour inside the restaurant, then I explained to him how to work in the oven and he also told me that he already knew something, but he also told me that in other places it is always different, so I told him how it works with us, and I also told him to stretch a Pizza and put it in the oven, in stretching the Pizza he is a little lacking and in the oven he is also a little lacking, but he already knows how to cook it well, and also cut it, he almost knows how to complete, he just lacks a little speed, so I left him with Danilo to teach him more and meanwhile I left Ramona in the salad area, while Evelin did all the preparation for tomorrow, since in the morning there will be no one in the salad, so she made the T...

Notes about the shift in general:   starting my day when I entered the restaurant, everything looks pretty good so I started with the preparation list and delivered it to each area and also today the new one who works in preparation showed up, I already told Dina to teach her well, then we started to fill in the line, just like nine Houston avocado arrived I checked them it looks pretty good and then I arranged them and set a date on them and then we got a ticket for two pizzas for 10:40 and others but it was not until 11:30 so we started with all the pizzas, in front when it opened everything was ready if enough tickets came out, so I started the breaks from 12 we managed to finish around two, meanwhile I was in front, if a lot of Pizza Slice was sold, as well as Pizza to go all day, we were always on the move and also finishing some preparation that we had pending, already at three we started to fill in front, since if a lot of slices were sold, when they came in The afternoon te...
