5/21/26 Thursday Mid w/ Raymomd

Notes about the shift in general: When I arrived, the dumpster was closed and locked. Republic picked up the recycling . I walked the store and confirmed inventory and then entered the Houston Deli, PFG and  BEK orders. I picked up milk and anchovies from the store. After I covered for breaks, I worked on changing the large cannoli from the box to wrapped containers. I spent some time going over the disclosure of duties for the prospective Shift Lead's meeting tomorrow.  Breaks started at 6:00 p.m. and ended at 7:30 p.m. All team members were able to take breaks.


The countdown to the World Cup is on, starting with Germany vs Curacao June 14th. We are aware that the World Cup will bring significant activity to the Houston market. I am reviewing staffing and dough prep to ensure we are ready for the increased sales. I spoke to Cynthia and plan to contact a few hotels a few weeks before the big event to let them know that Franks Pizza is not the only pie game in town.

2. KMOD stuff:

* Please continue to challenge PAR bake on the house pies and Roto pies. 

* FOH please go over the deferred orders with the k-mods. 


3. Food stuff:

* Josh reported that a tree roach was in a box of large cannoli shells. The box and contents were discarded. We are now portioning the shells in 3rd pans and saran wrapping the containers. 

* Cookies were a little over cooked. I asked for them to be remade.

* Sicilian pies had a nice rise, and a light taste. 

* Whole pies were looking very nice. 

* Salad dressings tasted and approved

* Please continue to complete temperature checks on all items

6. How did you show love? I gave Ramona a verbal high five for maintaining a clean, organized work space.

Notes for FOH: Slices were moving quickly and there was good communication between the BOH and FOH.
