FRIDAY 5/8/2026 BOH PM RONALDO
Notes about the shift in general:
The start of the day went quite well; tickets were coming in steadily, and we were a bit better prepared. We focused on getting everything finished up. Then, around 3:00 PM, we started stocking the front display with plenty of pizzas. Once the evening shift staff arrived, I took the opportunity to place our order with Dimare, since their prices were a bit lower, and I did some organizing in the vegetable walk-in cooler, as a fresh delivery is expected tomorrow. Noé arrived a little late—having let us know he’d be delayed—so there wasn't enough time to teach him how to make the Sicilian pizzas. Instead, I spent the day training him to work the front counter, selling pizza slices; while I was coaching him, I sent Ramona to assemble more Pizza Kits. Around 6:00 PM, I began covering everyone's breaks. The whole team took their breaks in the salad area, where we were getting a lot of sandwich orders. Afterward, I double-checked to ensure nothing was missing for the evening ahead, and that is how I wrapped up my shift.

The Sicilian pizza reached the perfect height. The slices are crispy, and the dressings and pizza sauce are excellent. It tastes really good.
