FRIDAY 5.8.26 BOH AM WILL
Notes about the shift in general:
Solid shift. Deliveries from BEK, Houston Avocado, Deli, and Alsco. Apparently we were shorted on basil, it was not on the SOFO invoice, but Raymond is taking care of it. We had a small 12-pie deferred due at 11:30 that went out on time. I helped organize deliveries, Gerardo with garlic knots, and the team get Marsal set up for the day. No large rushes today, but steady throughout. I ran to get more tomatoes but I think I've cleaned the Alabama HEB out. I also grabbed milk and anchovies.
Next shift be on the lookout for:
Produce from DiMare
1.How many pies did we run on the timesheet?
42. KMOD stuff:
Noe will train on dish today to be able to help tomorrow and Sunday. Danilo can help with Sicilians both days.3. Food stuff:
Sicilians were a little low this morning but by topping them and letting them sit for 30 minutes next to roto before loading there were as good as they get. XL pies looked and tasted on point.
