SUNDAY 5/17/2026 BOH PM RONALDO
Notes about the shift in general:
As my shift began, there was quite a bit of prep work to be done; we were busy finishing that up, and by around 3:00 PM, we were also selling a significant number of pizza slices and sandwiches. We started restocking the display cases with plenty of fresh pizzas. The front counter was busy, and tickets were coming in non-stop. Once the evening crew arrived, I took the opportunity to place the order for the Houston Avocado ingredients needed for tomorrow. Today, Danilo was training the new hire—showing him the ropes and teaching him all his duties—and I was also supervising; he’s actually doing quite well. I spent some time on the line helping to top pizzas, as things got a bit hectic around 6:00 PM. I then began coordinating breaks, covering for each team member in turn. The entire team got their breaks, and we spent some time restocking the line, anticipating a large volume of orders tomorrow; I instructed everyone to leave their stations well-stocked to ensure a smooth day ahead, and I double-checked everything myself. Everything looked good, and that is how I wrapped up my shift.

The Sicilian slices look spectacular—they rose quite nicely. The pizza slices look really tasty and crispy. The dressings and pizza sauce have a great flavor.
