WEDNESDAY 5.6.26 BOH AM WILL
Notes about the shift in general:
Solid shift. BEK and Houston Avocado delivered this morning. We started off the day with one 8-pie, 4 family salad deferred order that went out without issue. Lunch was substantial: tablets were going off, many sandwiches, pies and slices were sold. In my downtime I ran to the store for tomatoes, knocked out the PFG order, and drafted next week's schedule. Charles pointed out some cleaning areas of opportunity.
Next shift be on the lookout for:
PFG delivery1.How many pies did we run on the timesheet?
3. Food stuff:
Sicilian's had a solid rise, XL pies were looking great, dressings tasted correct. Romaine cuts were a little big. I talked to the team, and will have an eye on that.
4. Sales for the shift:
$37075. Labor for the shift:
40.66%
