WEEK 3 DAY 4 BOH TRAINING

 10/28/22: We trained from 10am to 4pm today. We ended early due to World Series being in Houston and just wanted to make sure everyone made it home safely with all the extra people in the city for game one of the World Series. We had them focus on the "deferred tickets" and put times that they needed to be done by. We also set up a sheet for marsal to do house pies to see how many we could do before 11am. Trainers have been letting them set up and at this point everyone can set up the stations with the exceptions of knowing how much of certain items to stock underneath station which is something we will know better as time goes on and we see what pies and items we sell the most of. We need to continue to focus on times for pizza line from Z1-Z3. We will be really getting on times and calling out times when placing peels on rack for Z3. We are continuing to push and push a bit more each shift to give them some pressure and how that feels. Dough group is getting better and we ...

DAY 3 BOH TRAINING

 10/27 Today we had tickets staged at roto line and salad/sandwich line. We gave them times to complete tickets by. Karen did great at rotating them out and really going over items that they needed to get down. She did tell me the red flags she saw with Linda and we will be speaking with her first thing tomorrow and getting that move done to prep. Tomorrow we are also letting go of Jose Pozo as he is just not a good fit for us. We tried him on dish and he just does not seem to have any hassle or seem to really want to be here. It feels like he just wants a job and not this job. Not the mentality we want or need for team so we will be parting ways in the morning when he gets in. Dough group did have a bit of issue in am with some wet dough but Raymond worked with them and we will monitor and see if those changes helped us on that. Day 2 BOH Training

 10/26- today we set up tickets for Roto line and Salad Sandwich line to simulate deferred tickets at stations. We Have been having stations set up their stations and each station is doing good at what needs to get done to set up station. We have finally gotten stocked up on prep enough for them to fully stock underneath/ and in stand up cooler they use near the line. There are only couple of employees that we need to move around in the boh. We moved Jose Pozo to dish and he is doing okay but not sure if he is going to make it. Linda is another one that we have been working with on salad/sandwich. she was progressing okay through the first two weeks but this past week with more pressure being put on the stations she is not able to handle it and communicate well with teammates so its causing her more trouble in this station. She has been given time to see if this is the correct fit and tomorrow we will be moving her to prep or dish as she is too panicky and not communicating as she ...

WEEK 3 DAY 1 BOH TRAINING

 10/25/22 Today we had Karen and Pedro from NOLO come in to help us train this week. We still have Francisco which has been great. Today I had tickets waiting on station for Z1s to start and for salad sandwich staton to also start on. We let them know that we are starting small but to expect what we called deferred tickets that they will walk into in the morning at times. As each day progresses I am going to add more and more harder tickets to get done as we are giving them today and tomorrow to read tickets and understand but times are about to be pushed hard. We are doing good we just need to push harder as we need to pick up the pace. They did cook and make food for the foh today for lunch and made themselves lunch as well today. Dough group is getting more solid. They think they are close to getting Sicilian down so hopefully by this week we can get that almost done as we will be serving this everyday and we need to make sure that we get this down.
