WEEK 3 DAY 1 BOH TRAINING
10/25/22
Today we had Karen and Pedro from NOLO come in to help us train this week. We still have Francisco which has been great. Today I had tickets waiting on station for Z1s to start and for salad sandwich staton to also start on. We let them know that we are starting small but to expect what we called deferred tickets that they will walk into in the morning at times. As each day progresses I am going to add more and more harder tickets to get done as we are giving them today and tomorrow to read tickets and understand but times are about to be pushed hard. We are doing good we just need to push harder as we need to pick up the pace. They did cook and make food for the foh today for lunch and made themselves lunch as well today. Dough group is getting more solid. They think they are close to getting Sicilian down so hopefully by this week we can get that almost done as we will be serving this everyday and we need to make sure that we get this down. We have ordered extra on product to have it more and more prepped up so that stations can fully open and start understanding stocking up for the shift. Only had to do a small produce order for tomorrow and dropped bigger bek order as most of it is for foh paper goods. We are trying to get everything in store this week so that we have everything and can see what we do need or are missing. Salad Sandwich staton had three new people today and they seem to be catching on. This is the only station that is taking longer to get down as a lot goes on in this station and it takes both people working as a team on it. Been harder with 4 people and everyone wanting to be hands on. We have been rotating them through tickets and Karen had them make to go salads and wrap to go subs more as they have not been doing a lot of that more of just building the salads and subs for here. Dish has been doing good. Ana really enjoys it and her and Jose P get along well and do a good job with this. Jose P has done great with baking off sub bread, croutons and today he got to practice doing cookies! Prep team is doing good they just need to follow the prep sheet in order and utilize slicer first thing in am. They only need to pick up more speed so we will be upping list and using a time sheet that Raymond has. Raymond showed up today and has been great. Very happy to have him here! He is also going to take over and do a cleaning check list for boh and a detailed one as well. Kaylana is working on scheduling for next week so that we are fully using 7 shifts from next week on. Cynthia M started today as well! she was on prep today and will be on prep tomorrow. She worked with prep group and got some hands on training on that. I gave her, her own prep binder and will be giving her the training schedule for next two weeks tomorrow as I am finishing up with that. She seems happy and really enjoying herself in the store. She had a good first day! Rubil is doing good on roto and Will is also doing good on roto and marsal. Ronaldo is another one who is doing good in the Z1 position. All and all pretty solid from them. Just need to push Z2 more and get them faster at toppings. We had a good close and covered any issues that we had in shift and what to expect moving forward for the next day. We have been doing our best to coach at the moment and make sure that we are giving every station attention throughout the shift. There are only 2 people that we want to move around which we will do tomorrow. So far I feel confident with where we are at other then salad sandwich. We all need to keep pushing to be faster but I feel like we have a good foundation laid these first two weeks to move forward and keep pushing. I will continue to monitor salad sandwich but I feel like they will get to where they need to be to run this station. Especially now we have the shelf and so items are not just laying where they can fit versus where they should be to run efficiently. I did have one employee Carolina Jurado who texted me and Kaylana and let us know that she wishes she could continue with us but due to family circumstances she is not able to and has to leave Houston. We also did offer KM spot to Francisco but he declined due to his wife and kids being his priority while his wife finishes up nursing school and furthering her education. We let him know that we totally understand and that we appreciate everything he has done since he has been here to train. He has been great and we let him know he is welcome here anytime he wants!
