WEEK 3 DAY 4 BOH TRAINING
10/28/22:
We trained from 10am to 4pm today. We ended early due to World Series being in Houston and just wanted to make sure everyone made it home safely with all the extra people in the city for game one of the World Series. We had them focus on the "deferred tickets" and put times that they needed to be done by. We also set up a sheet for marsal to do house pies to see how many we could do before 11am. Trainers have been letting them set up and at this point everyone can set up the stations with the exceptions of knowing how much of certain items to stock underneath station which is something we will know better as time goes on and we see what pies and items we sell the most of. We need to continue to focus on times for pizza line from Z1-Z3. We will be really getting on times and calling out times when placing peels on rack for Z3. We are continuing to push and push a bit more each shift to give them some pressure and how that feels. Dough group is getting better and we added Mario to the dough group. He has done well in this group as Raymond is really working with this group to make sure Sicilian dough gets to point we need it. It was really close on Friday so we will see this week! So close! Raymond is working on dough sheet and he has already made a cleaning check list for managers to use for closes to double check and make sure we hit everything that needs to be hit. Prep group is doing well and next week they will have their lists ready to go for them to start really hitting list in timely manner. Raymond is getting time sheet out to show what time it should take to get the prep list accomplished in timely manner. Dish group is doing well. Ana and Jose seem to be doing good in am and we have some newer in pm that are doing well as well. This next week we will really have more of a better idea of how they are. Salad Sandwich is doing better. We will be moving Linda Tuesday to prep to also see if that's a better fit. We gave her til the end of the week which she did not do bad just not sure she will be able to multitask on that station which is needed to run this efficiently. We did also give Jose Pozo one more chance to show us something but looks like we will be letting him go tomorrow morning as there is no where else to put him and he is not going to be a good fit for us moving forward. We had a talk with employees again at end of night for expectations to expect. We expect them to be on time, we expect them to be in uniform, we expect them to respect their teammates and work as a team. Those were are nonnegotiable we set forth as we can only work well here as a team and with good communication as well. We let them know we would continue to put pressure on them and were doing this bc when we open we will be busy and we also let them know how happy we all are and grateful we all are for them and all the hard work they have put in the last three weeks at this point.
