Day 2 BOH Training

 10/26-


today we set up tickets for Roto line and Salad Sandwich line to simulate deferred tickets at stations. We Have been having stations set up their stations and each station is doing good at what needs to get done to set up station. We have finally gotten stocked up on prep enough for them to fully stock underneath/ and in stand up cooler they use near the line. There are only couple of employees that we need to move around in the boh. We moved Jose Pozo to dish and he is doing okay but not sure if he is going to make it. Linda is another one that we have been working with on salad/sandwich. she was progressing okay through the first two weeks but this past week with more pressure being put on the stations she is not able to handle it and communicate well with teammates so its causing her more trouble in this station. She has been given time to see if this is the correct fit and tomorrow we will be moving her to prep or dish as she is too panicky and not communicating as she should with team on this line. She is very sweet just gets flustered and we will try prep and see if that's a better fit. If not we will have to let her go. Another one is Jose Pozo. He has been moved to dish today and did okay but we will monitor him as if he can not do well in this spot we will have to let him go as well. Other then those two the only other employee at moment is Desmond. He seems to not be as focused and able to stay on track as much as he should be. He has been spoken with about this by Charles and myself and did better afterwards but I think he feels too comfortable due to his friendship with Van. We are going to pull him aside and speak with him as well. Dough issues is we had a few batches from today not great and Raymond is going to take lead and really work on dough and has a great system in check for this so that we can narrow down the issues. He is also working on Sicilian dough as well. He has been getting with Karen for advice as well and she has been great along with Pedro. Eric reached out and he has been such a huge help and I am thankful for him and his team as I know what it is like to lend managers and hourlies and huge thank you to him! (which I have told him already :)

All and all they did better today but we did let them know that each day we would be applying more and more pressure for them to really feel it more and more as tickets will come and we will be busy. I had Kaylana speak and we introduced Raymond and let him speak to employees as well. I am focusing on letting Raymond and Kaylana take some lead in kitchen and really work on working with employees and being present for them which they are doing great with. Kaylana has done schedule for next week and Raymond is taking over cleaning lists, dough and is also going to eventually be in charge of orders once we get things more streamlined as ordering and pars go. 


One thing we are having any issues with is topo Chico and 12lb bags but we have already found alternatives to getting these in. BEK is getting our Austin branded cups here and should be ready to order by Wednesday next week and they are working on pizza boxes as well. There was a bit of miscommunication and so we are going to see if they can get those boxes or Jen's plan on what she would like us to use. 

We will see what tomorrow is like :)
