DAY 3 BOH TRAINING

Today we had tickets staged at roto line and salad/sandwich line. We gave them times to complete tickets by. Karen did great at rotating them out and really going over items that they needed to get down. She did tell me the red flags she saw with Linda and we will be speaking with her first thing tomorrow and getting that move done to prep. Tomorrow we are also letting go of Jose Pozo as he is just not a good fit for us. We tried him on dish and he just does not seem to have any hassle or seem to really want to be here. It feels like he just wants a job and not this job. Not the mentality we want or need for team so we will be parting ways in the morning when he gets in. Dough group did have a bit of issue in am with some wet dough but Raymond worked with them and we will monitor and see if those changes helped us on that. He is also working on Sicilian so tomorrow we will see how dough looks. Kaylana did interviews with Raymond when he was able to be pulled away and we hired on 6 people today out of the 12 she has interviewed this week. We are really looking for open or pm availability to fill the last of the holes on schedule. I feel confident we will be okay and we have some more interviews as well lined up tomorrow. The ones we got hired this week will be at orientation this Monday and we will get them training this week. They have open availability or can work pm which is really what we need. Dish machine turned off and nothing seemed to be wrong as I checked breaker and machine as did Mario and Raymond and so I had Raymond call out tech for dish machine and he should be here today to look and and get going. We think its a bad sensor for the door as its not reading that its closed. The team is doing good at setting up their stations and closing them down. Only station of concern was salad and sandwich but Sergio in pm and the others have really progressed more today and feeling more confident in station as a whole. We will continue to monitor and work with them.
All and all good shift. In closing we went over how teamwork is very important, respect is important and also uniforms. Starting tomorrow any disrespect to another, not being in uniform and not being a team player will get you sent home. These are things that we are going to be strict about as we have not seen a lot of this at all just setting the tone.
