Am: Everyone showed up on the am crew except for Sara. I reached out and she let me know that she wanted to be moved to prep and not be on salad sandwich. I let her know that we would move her to that station but not showing up is not the way to do that and that she needs to understand that we are trying to shuffle around existing and newer staff into the correct places and that we could do that move. We moved Josh to dish as Z2 is going to be too much for him as is the pizza line. We are going to see how he is on dish this week. We did not set up marsal this morning and only ran slices. We need to really think about where everyone should be. I am going to look at this tomorrow and get with Kaylana and see what is the best groups to put together at this point. Only item we are missing is the lady fingers which I spoke with Brian about. He said that he would go buy them himself and bring them to us but I let him know that I am going to see about finding them myself as well and getting them to store tomorrow morning at some point so we can do tiramisu. Fowler is going to try cheese cake later to see but looks like we need to bake them about 15/20 minutes longer but taste is there. Tiramisu taste is there just need to soak lady fingers longer. We did time trials and in am they did great at hitting times. I did let Will know which ones I would kick back and I feel confident that he can spot kick backs just need to work on him sending back to line before he attempts to bake if he sees the red flags on the pies. Salad sandwich on time trials was heavy for as it was only Leticia which did great and had a great attitude all shift regardless on getting a lot of tickets. I was in her way more than anything and she even stayed longer for pm shift to help out. She is great and her attitude is awesome. All and all good time trials this morning. Dough was cold and some looked like it had not risen much from 15th so I attempted to try to keep the cold out but hard to do with breaker constantly tripping and doors being opened through day for construction work being done. Drains got snacked and are good. Grease trap was cleaned out as well.

Recap 11/18/22
• The time evaluation today was a real eye opener. The staff that worked mersal did not work there before but they were glad to jump in and give it their best.
• We have areas for improvement with ticket management at mersal.
• A number of staff have asked to be assigned to a specific area so they can perfect that area before opening.
• Salad and sandwiches did very well as, well as rotaflex during the time evaluation.
• I've asked the more experienced staff members to constantly drill other team members about the air knowledge of specifications for recipes in their assigned area.
• There was a lot of prep needing to be done. Wendy and the team pulled together to get it done.
• New caution lights have been ordered for the trash dumpster and it should be installed by Wednesday.
• One team member forgot to clock out. A correction will be made to her time
• A big thanks to Wendy and Meredith for their help in prep
