11/19/22 BOH Kaylana-Raymond

People: 
I plugged mario in to cover Mike's off days and the salad girls off days. He replaced Sara's schedule 
Dez didn't show to his shift. I called him and he said that hir car "didn't have wind shield wipers" so he ended up having his sister bring him but he worked the pm shift.
Lorena came in to work a mid shift and she was very helpful in training
Chris has food poisoning and had to call in
I had to sit down with jordy about not playing around at work so much but also listening and communicating with others. Specifically listening to Wendy and Cynthia M.

Product: 
the bread needs to be put in the fridge only after it is risen. Otherwise it's difficult to cook before the others get there in the morning. Jose made good use of the  hot box
We had to throw out 3 bags of shallots because they were all really moldy. We couldn't salvage any. 
With just Wendy for prep this morning it was hard for her to keep up with the list but she knocked out and lot
I asked Islay to tray all the cookie dough we had

Preformance: AM did great keeping up with everything that was thrown at them. Everything that came out of salad was great. There were deformities on pizzas but mostly things were good. I've come to realize that pm mostly consists of newer people but that is a temporary problem. They will get there. 
Pm prep needs some guidance when it comes to doughs but Kevin's doing well over all. Ana and Jose cranked out a lot of dough today. Not as much as I'd like but that will come with reps. They did really well with just the 2 of them. Their fist time without a lead

Procedures: 

the calling out is becoming a problem and the lack of information we are receiving about people being late. They need to be communicating to their manager on duties and they're simply not. 
 Presentation: salad has exceeded my expectations for real. The over all feel of the resturant is really active and I can see it really starting to function 

R&M: talked with Ross and Mettler about something to stabilize the board on roto. He has pieces he may be able to put on tomorrow 

The employee area is mostly set up now which is nice. We will need to get with the team about actually using the lockers. I told them it was okay to hang their jackets with the work shirts but it needs to be on a hanger

The shift started with a conversation with Fowler about the night’s time trial evaluation.  It was determined due to the number of new team members working tonight that we will suspend the time evaluation. There was more focus on The product quality. 
The mersal team is learning more each day. We focused on product, timing, organization, hand washing and customer service as they are on stage and have face-to-face interaction with the guests.
  Salad and sandwiches is one of our strongest area and continues to improve every day. The new team members to Z1R, Z2R and Z3R are coming along very well. 
  Prep was able to complete a number of items on their list
It was regrettable that a team member with a valued skill set demonstrated the inability to follow instructions and has done so on a number of occasions.  Unfortunately Kevin clocked out and left without authorization. He left sicilian incomplete at the work station.
•On a more positive note. I asked the team members as they were leaving how they were feeling about the upcoming opening and they all said that they are happy to be here and feel that they will do their best to ensure that we are successful
