 AM: Myke called in as he is not feeling well. We should be okay as today we are not going to make dough as it would be 3 day on Thursday which we are closed so today we will be focusing on prep and making sure we get some detail cleaning assignments done. We moved the two shelves in dry storage yesterday and made room for carts. Got all dry storage on one shelf in boh. We will see how that works for us. We did move dessert dry goods up stairs. We are also going to utilize mixer for desserts as well so we can get those done today or tomorrow. We are going to push roto line and practice and rotate marsals through area to do slices up front for practice. Sofo did bring in mozzarella and feta cheese this morning as well. I put in BEK and PFG order for tomorrow already as well and made sure to order what the front of house asked for (topo Chico and Maine root lemon lime bib).

I decided to give all managers in boh 3 days off this week. Two of our days off are together and then we all have thanksgiving off. We will be running shifts all week other than Thursday so that the boh especially the pm gets the practice and reps they need to get up to speed as they are greener then the am staff. They will get there they are just behind as they started a week or two after with some of them just starting last week. We have enough people just need the reps in with them. I had the AM crew switch up and had pounders and toppers also practicing on roto as this is going to be a need of staff knowing oven as well as Jose, Will and Rubil. Mikael is doing well for only one week on roto. Jose is working tonight as well as he worked last night to help out guys on marsal and roto. We are doing our best to get everyone at night up to par as they are greener. One main reason I did not want to have them take off this week other than Thursday. Anyone in boh that had requests though got those granted. 

We need to make sure we are having am and pm talks. I plan on having a am talk after the am crew is done to refresh over rules. They do a good job just want to keep making sure we are following rules in boh.

I got Kevin Mckee into portal to terminate as we parted ways with him since he had disrespect shown to Raymond and that is not tolerated at all in the boh. Kevin understood and was sorry but I will not have anyone being disrespected in boh no matter who it is. 

Houston Deli came in so we have plenty of product. 

I have Wendy making tiramisu now so we should have tiramisu to taste soon. Cookies will be ready to taste again tomorrow and we are going to get cheesecake done after thanksgiving as well so by Friday we should have all desserts. We hit taste but cheesecake needed a bit more height and a more cooked brown on top. Needed like 30 minutes more in oven. We have gone over this with management so we are all on same place.
