Nov 4th PM
People: everyone is doing great in training. All the new hires are on 7 shifts and have access to their schedules. Islay and Estela are getting great at seeking things out to prep. I would like to get them in the habit of that for pm shifts. They do have concerns about not getting a full 40 hours. Roxana and Jordan are a dream team. They work so amazingly together and there is not the slightest bit of miscommunication between them even with the language barrier. It's very impressive. Even is picking up pounding really well. Cynthia and I got with ms.linda regarding moving her to prep. She's not happy about it at all. We explained to her that we do think she'd just thrive better there but she made it a point to let us know she was unhappy.
Product: I stopped in to get the Roma tomatoes and we were low on basil for the day. Towards the end of the day it didn't seem to be a problem. The Sicilian wasn't left out last night so it took a while to rise, so they were able to practice with what they had and it was effective. We got with prep about the brick sized rice Krispy treats. Pizza is tasting phenomenal
Presentation: food looked great today. The pizzas are also looking a lot better. They are coming out more round and so the cuts are more even. Evelin is really doing well in spreading toppings evenly but she needs to work on putting topping around the edges. I spoke with even about dusting the pizzas off a little but more so that we don't have a dry looking crust in the end product
Preformance: We did a race between salad and sandwich to see who could finish their 8 tickets the fastest. Salad win by 6 minutes. It got everyone in a great mood but also I'm able to see that we need to press more on sleep. That going said they're all excited to do it again tomorrow. They were able to see the importance of restocking the line. Prep was able to knock out a good few recipes of dough and also organize the cooler a bit.
Procedures: the schedule was finished and posted and everyone other than Estela had access. She is going to make an email and she should have access by tomorrow. Closing could be more solid. I had to have more thing cleaned up during check out than usual. I want them to stay focus on working clean. I spoke with Britney about the best set of for the Sicilian to make sure that it proofs evenly. Stacking them in 3 on the cartb works best. I need to get prep in the habit of putting up orders asap. The cooler was a but of a mess. I think its mostly the extra carts and the extra dough crates. I'll have to look into organizing that
