 PM Shift: Came in earlier today and made sure we got our BEK, PFG and SOFO order in on time and Raymond did get in produce order in for tomorrow. We are looking good on product so we will keep an eye on items. I did place an order for foh for Mexican Cokes which will be in tomorrow morning from Houston Avocado. Really good shift tonight. We did miss having Rubil here but he is out sick and we have a doctors note stating he needs to be out until Sunday. We will see if he will be good to go by then. Mikael did a good job on roto other than two pies. One he was trying to fix and it messed up which caused another pie to mess up but were able to push those to marsal to get done. Other than those two pies everything else came out on time tonight. They got a push in slices but Francisco was with them and was able to help direct them with all of the slices coming in. With being short Rubil and having to let Amaya go earlier then closing due to his ride situation this week we were still able to cover positions and make sure we had enough to close down as well. Lorena did stay an extra hour to help out as did Christopher. One thing I did see that Niki noted for meeting was someone took a number 5 and modified it to have no mushrooms just off one side. My understanding is anytime they want to modify the tride and true they could not but we did get the pizza made and listed this as a topic for manager meeting. Niki took a lot of notes on shift. There were a few tickets with no time but not like before as it was only here or there. There also was only a few tickets that came through that did not give full 20 min times, but foh was able to pivot and get the guests spoken to and taken care of. Everyone in boh took break in pm. I asked Mario before he left if recycling needed to be put out and he told me that they will be picking up at night so we did not take recycle out. Tomorrow I will be making manager schedules and getting that done along with employee evals that Terri sent out. We did do garlic knots as well tonight and left them out so we will see but that should work as it did the other day. Yesterday they all went into walk in but moving forward they will be left out after rolling. Employees in boh did a good job and were paying attention to tickets coming out. All and all good day and little kinks to work out but nothing major. 


One issue we did have at end of night was drains again. The pipes need to be jetted not just snaked. There is not enough of anything we have going into drains. Only drains that had issue was one at handsink near expo area and on line. Other than that it did not flood any other drains. Tried plunging but that did not do anything to help. We had to sweep spot scrub and mop on the line so we will make sure it hit it up harder tomorrow evening as I close so I will make sure that gets done. 


There is an event this weekend down the block at Midtown Park so I expect we will see some foot traffic this weekend!

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Tuesday 3/12/24 BOH AM Lana

Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
