People:
v very excited for Mona to be back! Good to have her around
We need to get with staff to make sure they know how to clock in. I'm correcting job codes everyday now at this point. I think its an important thing to cover in preshift
Estella and Dina are training in writing prep lists and they both have a good understanding of what will need.
Evan had called out for tomorrow and he is going to reach out to others to find coverage.
Rubil will be back tomorrow 🎉
2 new hires are onboarded and ready to start tomorrow. They finished orientation. They're on hotschedules and I added them to the schedule for the rest of the week
Product:
* had to throw out 38 medium and 28 large as they were left out. We did manage to have get some dough from Austin and it helped out a lot. Medium dough is definitely now but we tried to force proof some stuff from today. Temps were raised by 9 degrees and 1 grab of yeast was added. We did 16 recipes of dough to catch up. We called Estela and merideth in early to assist and pulled Henry off of the pizza line.
*Sicilian was not ready upon arrival as it was not left out. Myke and I put it in the hotel for about an hour and it definitely helped. We were able to have slices only for the A.M.
*bread also needs to rise before we to it in the cooler. It worked or with help from the hotpot but if we have to wait on bread, marsal gets behind on making house pies and we end up making them in Roto. The same for cookies. They need to be portioned every night. We were out of cookies as Dina was training in them and they didn't come out right. I should have walked her through it better
*new baby oven is up and running and ready to go. She ain't pretty but she's gonna be great. She got a good deep clean. Shout out to Ana
Procedure:
I'm getting the hang of the dough sheet
Thank you mario for teaching me new hire portaling. It's gonna be a big help to know how to do it.
Thank you Megan for walking me through the scrub and what the important aspects of it are
Presentation: We didn't have many problems pizza wise. Henry is newer to Z3RR and so plus we're coming out a bit more oval due to improper loading, but they were all fixable and Pedro is doing great training
Preformance: it was busy than normal for a morning. Were picking up pase which is great. They're not even flinching at big orders in the line. They're keeping up well. We just need to work on communication a bit more.
