12/18/22 AM SHIFT BOH

  •  Everyone showed up except for Mario S. this morning. He has been showing up and this has not been an issue so not sure if he let another manager know that he would be out or not. He was a no call no show on am shift.
  • We had 1/2 tray of garlic knots to start and they looked great! We did end up making another batch asap so that we could do more knots. Raymond and I spoke about it and we are going to make another batch this evening so that we can start having 2 carts full every day as we are going through a lot more then we thought we would. 
  • Sicilians looked good today. There were about 7 of them that did not look good at all and we just threw out but the rest of them rolled out from yesterday looked good. We had Sicilian whole and slices for the day.
  • I went over dough with Raymond and also Myke. Input our numbers into dough chart and we are trying to still catch up with LG and XL dough. We should have enough for today but we will be making dough all day and by Tuesday we should be finally able to really catch up. We will continue to monitor this throughout the shift and tonight. 
  • Cookies looked good today!
  • we need to watch cucumbers as they are full of water. They feel good but when cut into they are not great. I got a case of cucumbers so we can redo those.
  • We cut 2 cheesecakes and placed 2 back up in fridge. We also put 2 tiramisu in fridge as back up and placed 2 in expo fridge with cut cheesecakes.
  • BEK order was put in. -Dr.P and Topo will be in from that order.
  • PFG order was put in. 
  • SOFO order was put in.
  • Raymond is going to put in produce order before he leaves this evening.
  • I brought in paper plates for today. I have 4 cases coming in tomorrow morning so we are good.
  • I did end up getting more basil, romaine and mushrooms for today as we went through the produce order that came in on Saturday. We will just need to up the order on Friday for Saturday to get us through til Sunday night into Monday morning. 
  • Spoke with Roger about Jordy last night. I have informed Raymond that if Jordy does not stay on task and is disrespectful to him he is to be sent home. Jordy is on probation and I will not tolerate any disrespect to anyone on this team employee or manager wise.
  • Recycling is a nightmare in back. I organized boxes on dolly and left it looking better along with mop sink which we all need to make sure we are doing what we can to organize that in back. I usually have them hose it off but let's do our best we can with this everyday. I already put on slack that recycling did not pick up on Friday so we are way overfilled at the moment. 
  • We threw out all the old dough or any dough that was over proofed by today. We should have enough to get through today and we need to continue to monitor though the day to know where we are at. On XL and Large we need to make sure we are letting and giving them time to proof. 
  • I let Raymond know that I would be calling Kaylana tomorrow morning as she opens to talk with her and make sure we have what is needed rolling into Monday.
  • There were only a couple of tickets that got sent back with no times and just a few double bookings and just a couple of not enough time on tickets given. We were able to handle it though.

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Tuesday 3/12/24 BOH AM Lana

Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
