12/28/22 BOH PM

  •  Everyone showed up except for Jordan as he had a death in the family last week. His sister was killed so he is out I believe the rest of this week. Leticia stayed and worked a double which was a huge help as it was very busy on salad and sandwich. We had tickets up until 11:20pm. We definitely need to get some more boh cross trained on this station. 
  • Marsal tonight was chaotic. We did not have the greatest staff in marsal tonight. Chris did not do well tonight on marsal, he tried but he was getting lost. I stayed up their majority of the night as slices were coming hard at marsal. I think the real issue was that with everyone in am leaving at 4 and marsal not coming in until 5pm today marsal team did not have a lot of time to prepare for the pm rush and the am did not set up the pm for success with pies made before they left. Not sure why as they have been but I will be working a mid tomorrow so I will make sure and have this as a talking point when we talk in am. We have to set each other up as we literally kept going. We need to make sure we have the right people up there for sure as it comes hard at night with slices. I also think that it would be wise maybe since I kept seeing multiple tickets coming in with a minimum of 5,6 slices some with 8 and 10 slices. (maybe suggest ordering a whole pie as its cheaper and when slices is getting hammered and roto isn't it might help balance it out? just a thought)
  • Line in boh did well. They kept up with pies and I did not hear any issues. I was in back until pop came in marsal and then spent the rest of the time up front. I did break out our pounder Ideal and pounded for half hour at end of night.
  • I was only not able to get to break out salad station as they never stopped and I did not have a chance to stop up front to break them out. 
  • Meredith G. left a bit earlier today as she was feeling more and more congested and needed to go home and rest. I told her to keep us posted on how she is feeling.
  • Cynthia M. is feeling better and will be back tomorrow! I have adjusted schedule and she will be in.
  • Jordy did better tonight. I did not have a lot of time to be back in prep area at all as I was mainly on line and in marsal til 11pm. 
  • garlic knots look good in fridge. We do have more that were done tonight that are in there that we need to pull out first thing in am along with Sicilian. I pulled some Sicilian out just to see about temp and leaving out but those will need to be pulled out of walk in as well in am. 
  • Sub bread was left out and I put in walk in before I left. 
  • We did have two over bookings that I got with James about. He blocked off two time slots for us but line was good with it. Did not have any issues with times on tickets which was awesome!
  • Expos tonight were great, good communication with boh team. It's happening it looks like with chow now orders and walk ups. 
  • I am going to place orders for BEK, PFG, SOFO, Houston Deli and produce tomorrow when I get in at noon tomorrow. We should be good on all product until then
  • I picked up three sleeves of just white plain hot cups 10oz until our branded ones are in. Brian said he would go grab a case of those and the cold cups for us and bring them to us then. I showed Mettler the white cups and he was good with that. 
  • BEK is now carrying the Mexican coke and Fanta! We just need to make sure that foh break down the boxes for sodas and not leaving that for boh to do as well. 
  • I am going to pick up a new blower for ovens on way in as our first and now second blower is not working. 
  • Tomorrow I plan on organizing and making sure all product is in the place it needs to be. There is so much product in dough cooler and up stairs in dry storage area. I will plan on making this my goal for tomorrow as we have to keep it organized. 
  • We need to make sure the expos do not over call for items at end of night that is not needed as they called for garlic knots later and we ended up cooking off more which also does not help salad sandwich when they are hammered like they were at the end of the night. ALOT of subs. Hopefully the new door Mario ordered will be in soon so we can fix it and get it going!
  • I am going to get with Kaylana and get all food handlers in from boh staff in. We will get that done. 
  • I was not able to do my invoices today but I will make sure to get it done tomorrow and we will be caught up on that as I do it daily.
  • All and all busy shift, just short staffed on management side with Kaylana and Cynthia M. out. I have it so that there is a mid that is here later in pm with closing manager to help in pm as that is where the bulk of the business is coming and I want to make sure to protect boh as much as possible, just hard when managers get sick :)
  • All and all did not have any issues with staff. I will say that we need to pull Islay aside and talk with her. Not sure if she's bored in prep or just being lazy. She's getting stuff done but I feel she could do more than what she is doing. Same with Jordy. He was better tonight but I also was not able to monitor him as much as I would have liked to to see what he was doing. He was helping on [prep and dish and he did what was asked of him. We just need to continue to monitor him and make sure he is getting better not worse.
  • I turned in waste sheet/food sheet to Van for him to ring in to account for. 
  • We need a new stove burner as ours is shorted out it seems like. We had enough spinach for the day and we have a bit going into tomorrow but we will need to get that done in am.
  • We also need to get cookies rolled out in am as we did not have time to do tonight. We did make the dough though and I will make sure to call Raymond as he opens so that first thing at 7am when prep walks in they do that so that Jose can bake them off asap. As soon as I am in I will also make sure to have this done for the next day so that there is no issue with cookies. 
  • Cookies and Sicilians looked good today!

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Tuesday 3/12/24 BOH AM Lana

Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
