OT: We need to continue to always monitor and see before every shift who is going to be close towards end of week so in beginning of week when business is slower we can make cuts and utilize them when business is in the building.

We need to continue to monitor knife skills.
Jose and Roxana R ran marsal tonight as we were slow and they were able to hold that down. On the roto line I had Ideal, Lorena and Tamara. It was very slow so I had them shut down line at 9:30pm and sent all to marsal at that point for all pies to go up front and get roto line cleaned and get them out. Darrone put his shift up and he said he spoke to Roger and that Roger agreed to pick up his shift as his hand was still bothering him. I looked in 7 shifts and I saw where Darrone put up the shift but Roger never took it or tried to take it. Not sure what miscommunication happened but we will need to talk with Roger and Darrone about 7 shifts and making sure that they accept the shift and it is approved or it's still your shift and responsibility. Idael does need to pick up more speed but I think with less talking he will.(He just needs to focus) Lorena did a good job tonight and went up when we switched all going to marsal and she ran in marsal with Roxana and Jose. Ideal and Tamina and Gambino closed down roto and were done by 11pm. Prep was done and out by close and only ones left past 11 were the three in marsal which started cleaning and dish. All and all good shift, just really really slow. Foh did a good job of putting times on all tickets and not overbooking tonight! First shift since open and even though it was slow it was a happy moment for Niki and I :) I think the only thing I saw was there were two tickets that just gave 15 and 18 minutes to make so not the 20 but we were slow and able to push and get those out on time. I did get with Expo and niki on those just to let them know.
Gave Niki swag gift to give to foh for some questions she had for them in pre shift today. Told Leti that she rocks and that we appreciate her. She's doing great and is learning pounding and really wants to move up. I also took care of a few of the foh that were here at close and got them food as they got times on all tickets and there were no overbooking! It was slow but they did a great job so I definitely wanted to show some love to them for it 6. What did you teach someone today
Showed foh where cup holders were located as they thought we did not have them. Might be wise to preshift storage places up stairs so that they know where items they need are as it was slow today but on busier shift foh will not have time to find someone and ask and go get. Thats precious guest time that is wasted, just suggestion :)
We need to look into Hobart shredder as it was not locking correctly.

- Gerrardo accidentally threw out all oregano and chili flakes that were in their containers up front. Me and Niki spoke to him and I got with her about waste which she put in :)

What Do We Have? Mateo was able to complete the entire dough list himself tonight with help of ladies in prep team to roll. Went smoothly and he did a great job!
