12/27/22 BOH TUES
- We were closed today so we are baking off cheesecakes, making tiramisu, making dough and also prepping up items needed.
- We had a busy Monday with $17k so I made sure to stock up on certain items on my orders for tomorrow. We have plenty of Mariana coming in along with everything else. I saw that we ran low on clams with only 3 cans left and marinara was short by 1 can. I have made sure to up par on those. I also ordered NA Bev to keep pars of...

- I am starting with these as pars and will make adjustsments as needed. I do need the produce cooler shelf that we gave to foh for NA Bev to be organized well so that I can keep up with these NA bevs. There is still a Fanta on another shelf and they should be organized a lot better then what it is. I have asked the past week for this. I let Van know about this twice as well. I am going to do today but moving forward this is something that I need foh to do as I order it and keep up with it the least that foh can do to help me out on this is keep it organized. I spoke with three foh managers about this the past week.
- We had a lot of produce hit today! Im sure we will go through it we just need to watch as we do not want to have to throw out a lot if it goes bad before we can get to it, but we should be okay as we had busy Monday and I expect it will be a busy week for us.
- I have portaged more measuring spoons as we now can not find them. We had two sets in prep area so not sure what happened with those.
- Got tacos for staff as we did not cook today. Moving forward we will make sure to communicate that staff on Tuesdays will need to bring food for lunch. I am personally going to get just a few tv dinners for freezer in employee fridge to keep some meals here in case they forget.
- got all invoices in and receipts in.
- Fixed manager schedule as Kaylana tested positive for covid yesterday. Only symptom she has is sore throat and she is going to test in 3 days and see where she is at by then. Cynthia M. went to ER last night and was diagnosed with strep and flu. She is out as well. I took them both off schedule and ran with just Raymond and myself. I have a lot of hours this week but I am hoping Kaylana or Cynthia can be back by Saturday and Sunday. If not then I will run my long schedule for myself and the following week make it up to myself.
- I spoke alittle last night with Raymond but if we see something we are low on let me know ASAP. I will go get whatever is needed for boh. I know we are tight on a few items so I came by on my off day Monday morning with product so I could have grabbed marinara in the am. I am going to up par on this but moving forward the earliest we know we are low on something the better.
- We are going to keep working on Sicilian through the weather being so cold. We are making sure heat is on in boh area and that we are watching them through the day. We have made progress with Sicilian dough just now working through weather issues with it.
- Cookies and garlic knots looking good still, Jose Puac has gotten cookies down so far!
