4/22/23 Saturday BOH PM


1.  How many pies did we run on the timesheet (⅖, ⅗, etc)?
5/5 and 4/10s

There was an overbooking at 7:40-7:45 due to Sicilians only getting one time slot each. There was also another overbooking later that Niki caught and let me know about. There were only 4 tickets I saw from time I came in at 3pm that had no time at all on the ticket. There was also 2 tickets that did not allow for enough time to be made (16min and 18min) but we did get them out on time just had to push a bit but we did not have our pop when that one happened which helped.


2. KMOD stuff

We need to make sure that Blogger notes are done before we leave the building moving forward. We are missing quite a few days and we need these notes even if nothing happens in the shift that is crazy or we think is not important. I know we have been busier and having to push us and our teams harder since we are working with less staff but we need to get them done or find time to do it in shift. We will talk about in kmod meeting to see what is the best solution to make sure that we are getting them done on a daily basis.

We need to make sure we are getting dough cooler and upstairs organized. I organized up stairs and I will organize walk in tomorrow before orders come in on Monday but we need to have our guys and gals get this done and maintain it on the daily. Again, we can discuss at kmod meeting as we need to make this a priority as if we do not things will not be fifo'ed correctly and we will order items we don't need bc they are not where they are suppose to be. Let's just really try to maintain on daily basis as there is always some down time in the day that it can be done.

I have been sweeping and doing the stairs myself since Thursday this week as boh has been okay closing and since foh does not have as many as close I have just done it to help out and after I get them done I have let foh know that they are done. 

At close we need to see about getting with foh about getting items back to dish asap or see if they re pre bussing a bit at tables so that dish does not get piles at end of night. Just a thought to bring up with modsquad this week. 

I let Niki know but I did catch a foh walk up to the croutons and just grab one and pop it in her mouth. We will address this with modsquad this week as that is a no no. I also want to talk about 
the cheesecakes and tiramisu that go out of date as only foh has been just taking them and moving forward I want foh manger who is going to discard to get with kmod as boh makes them and does not get them like that and it would be nice for them to get to have some since they do take the time and many hours to make every week. 


 3. Food stuff (Notes about food issues)

Yesterday Ana cut beautiful eggplant and today when I got in I saw what Bernadina prepped and it was horrible! We need to get with her and let her know our expectations on eggplant as she has done it before so not sure why it was cut so small when Ana was able to cut it correctly.

We still need to monitor cucumbers as they look good today but they look a bit slimmer then a 2 

Estela does not need to make the prep list moving forward and a kmod needs to be doing that. She only had 3 provolone to do and we only had 1 tub. I had Meredith do 8 provolone and 8 mozzarella as she finished with dough early. We are ahead but tomorrow in am first thing they need to make some more as we do not have the time to get it done as we have been alot busier in pm and with prep lists not being completed in am and finished off in pm along with fixing dressings and other items its a harder push on the team in the back to add all the cheese. We can definitely do it at times but if there is call out that will be different so let's please get ahead on that as we will run through it way before it even tries to go bad. 


4. People (Z1R, Z2R, Salad, prep, etc) (Salad: Juan- he did great, even helped top pies in downtime, wants to be a trainer, etc)

Roxana and Silvia rocked it in marsal like usual. Gonna be sad to lose Silvia tomorrow as its her last day before she's going back to Mexico. I am going to grab and cake and flowers on way in for her as well:)

Ideal worked in marsal pounding and topping and came to the roto line to help out anytime he had down time. He did a good job today.

Evan and Georvy pounded tonight. Evan does really well and gets we have to hustle. Georvy did well its just that he starts talking and loses track. We have to make sure we push the line and we will need to have a talk with Georvy as he needs to be more focused at end of shift. When its time to clean and go we need to do that and not socialize.

Rubil and Gabino did well. Rubil was moved to cut slices as he is NOT the one who needs to load pies into roto when we get popped. He does not keep it straight and oven always drops temp when he loads. Gabino needs to be the loader period in these situations. Rubil did let me know that he was arrested on Sunday night as he did not pull over for the officer bc he did not think it was a real cop and it was and he spent the night and day in jail for it. I told him that I appreciate him being honest with me and I asked him if he was going to be at his future shifts as we can not put up with this happening all the time. He said he would be here and that he understood. I would like to have a sit down and put him on probation as well but want to have another kmod with me so that he knows we are all on the same page. 

Lorena did great and helped out Jordan later in evening on salad and sandwich station. Jordan really needs to communicate more. I told him again tonight. He is one we need to have a sit down and explain that we get it gets busy and he needs to ask for help period. He needs to communicate it to expo and let foh know as well. I like Jordan and I think his other job is making it hard for him so he might have to make that decision as if he does not perform like he needs to we might need to see about making moves. 

Bailey kept up with dishes all night and dish pit looked great all night long!

Ana and Eli did great with prep!

Meredith did great, knocked out dough, then all the mozzarella and provolone as we got down to last provolone tub at 8pm and we were down to 4 mozz. This is something we really need to make sure we have enough of going into the pm shift as pm shifts have been busy and kmods are pretty locked into getting pies and subs pushed.


5. How did you show love? (verbal hi-5’s, public praise, complemented food, etc.

Told Bailey he killed it tonight!
