4/24/23 Monday BOH PM CG

Very slow night and never picked up. Empty in the streets. Weather was nice just not super sunny but nice cool breeze. 

1.  How many pies did we run on the timesheet (⅖, ⅗, etc)?

5/5 and 4/10s


2. KMOD stuff

I organized the dough cooler again. I am going to slack the before and after so we can get with Joel as when the truck is put up I expect it to really be put up and debated and rotated. Everything was on the shelf but definitely not organized. It should look like a grocery store shelf not a warehouse. Let's make this an area we go and touch product in as we have to keep it organized as if we start building the business we can not be fighting this battle. They know the expectation as does Joel so we need to have a talk with him about that and his prep time as Bernadina is killing it.

I did go through produce cooler as well and got some items off other shelves but nothing too bad in there as far as organization. 

I did put hands on dry storage as that does get messed up a bit through the day but nothing too bad there either.

Mettler has some Homeslice swag in his suitcase in his office and so by Wednesday try to look and see if there is anything you would like to buy! 


 3. Food stuff (Notes about food issues)

Meredith will be in tomorrow morning to do tiramisu as we are going to need that. We have the last three containers in the expo fridge. She will be in about 8:30am and we have all the product for her to complete this! She is not on schedule but Lana called her and got her to come in to get us through as we have been selling tiramisu more!

Sicilians looking good! Process of leaving them out is still working well but we do need to get them into dough cooler as soon as they start to really proof.

4. People (Z1R, Z2R, Salad, prep, etc) (Salad: Juan- he did great, even helped top pies in downtime, wants to be a trainer, etc)

Lorena ran alittle late but Ronaldo stayed til 6pm til she came in for marsal. She did really well loading and cooking off house pies and handling slices. 

Jose Perez ran roto with no issues!

Ideal did well on pounding and ran roto for Joses break. He definitely needs some more practice and training on roto but he did well. He did mess up one pie when rotating and we remade and got with Gerardo on expo. It was out 5 minutes late but it was a uberdash and they had not shown up early so no record skip there. 

Estela is doing well on toppings. She is building speed and looking forward to seeing her grow. She also practiced some pounding on down time as well. She just needs more practice. 

Mateo finished dough, helped out were he could and came and practiced some pounding as well for a bit this evening. He is doing well and just super fast on dough!

Bailey kept up with dish all day and was on top of it. We were not super busy but he kept busy taking trash and helping out with Sicilians as well.

Ana did good on prep. Her eggplant cuts are beautiful 1x1 cuts. She did a good job and got it all done but was not able to help and do floors as it took her til her out time to complete the list.

5. How did you show love? (verbal hi-5’s, public praise, complemented food, etc.

Told Bailey good job on dish and that he killed it! 

 6. What did you teach someone today

Worked with Estela on pounding and giving her tips and encouragement.

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Tuesday 3/12/24 BOH AM Lana

Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
