Cardboard was in drains! YEA! Now we just need us all to get with blogger. We are going to talk about in kmod meeting but we HAVE to try to make time to get them done every shift.
Dough Cooler: I went in there and organized. I took everything out of boxes and got everything up on the shelf. I took out the broken dungage rack in the back that was holding the mozzarella and it opened up so much more space. I have taken pictures and slacked them so this is how we need to maintain it and make sure our boh is keeping it up.
I organized up stairs storage area in phone bank area yesterday and I also slacked photos of that as well. Again, we need to keep it organized. I saw an empty box where plates are and I asked Riley who it was who just took the last plates and left the empty box and she said Karma. We need to address this in modsquad as boh and foh need to both be taking boxes out and helping out keeping things organized in this area as majority of the upstairs is for foh. I took pictures of area and slacked it yesterday as well.
I organized and cleaned up the prep/dough area as well today. Things live in a spot and they do not get to go wherever we wanna put them. This is another area we are going to have to be on top of boh with as we still need to pull out the tables and scrub back wall. Got it wiped down but it needs a scrub in some areas. If we do not keep this area clean we will get bugs and that is NOT going to happen!
There were NA boxes that I slacked but still sat there for hours afterwards. FOH really needs to get those boxes out as we break down 95% of boxes and we have been on them about this for months. When this happens they see foh get nothing done to them but they have to maintain boxes out all day long. Something that we have brought up in modsquad months ago and needs to be addressed again as if someone trips and falls it will be bad at the back door. Plus there is really no room when we start stacking boxes there. Also there are small boxes and nothing heavy for them to take out to recycling..
We need to make sure that in modsquad we get with the about putting items in dough cooler. They have the shelf in our produce cooler that they can use for their half and half but we do not have the room to keep foh items in dough cooler. With business starting to slowly grow a bit it seems we will be holding more items and we do not have the room at this point for their items. They also have a whole side of stand up prep cooler that they can place back ups in if needed but we are already limited on space for our product. Also do not want to see a huge tub of those fall from top shelf all over dough cooler.
Straightened up the dry storage shelf.
We need to keep ANYTHING AND EVERYTHING OFF THE TOP OF THE COOLERS! They are not suppose to stack wet items on top and I have made a sign that nothing goes on top of coolers! This is also a health code violation that city will dock us points on! Let's not loose points to carelessness and laziness. All small wares fit on shelf at dish as I have been organizing and it can be done if we put things were they go! Again we need to keep monitoring this!
Ideal scrubbed down the stairs and got the gunk off metal pieces on stairs.
3. Food stuff (Notes about food issues)
We are going to need to make tiramisu tomorrow or Tuesday morning but we definitely need it before dessert day! We should have enough to get through tomorrow but if we can get Meredith in or Estela can do we need to do it!
Tasted dressing and lemonade Eli made and they were good!
Cucumbers were fixed and done at a 2.
Sicilians are still looking good after being left out so we are still continuing that process. I updated slack the other day about this as well.
Did not have any kick backs or mis-topped pies tonight. Pies hit their times.
Eli and Ana did a good job on prep and got it knocked out and Eli left on time and Ana did get floors done before she left prep area.
Lorena did great on toppings and worked with Estela as Estela is training on the line. On down time Estela practiced pounding. She will be good, she just needs to not be scared of the dough in sense of messing it up. I let her know when I started I was horrible and it just takes time and practice. I also let her know that not to worry about tossing it up in air as I do not do that and that can be learned after the basics of pounding. I think in a week or so if she does some down time practicing she will get it. Lorena also left at 10:45pm instead of 11pm. We were slow so she went early.
Gabino is just a great guy and really love when he is on roto. He does a great job and I let him go a hour early tonight since we were slow so he left at 10pm instead of 11pm.
Mateo came in and once dough finished he got Sicilian done and then since there was down time for him we got him to the line and had him practice pounding as he has been wanting to learn and I am here for it as he is good! He is also going to train on roto in May and I know us KMODS are looking forward to seeing him grow. Such a good guy! He did well for first time pounding. I had Jose, Georvy, Evan and even myself pounded to show how everyone does it slightly different and also was very positive with him and Estela. They really want to continue to learn and we are letting them as with losing Silvia and business looking like it is slowly picking up for us we need to make sure we have coverage anywhere we can get our staff trained.
Jordan did well on salad and sandwich but he also was not hit hard tonight. He hit times and Wendy and I jumped on to help here and there. I made some papers for sandwiches for him and helped him stock some items at station.
Lino on dish was staying busy but he is slower. He also has a bad habit of not putting items back where they go. I worked with him putting up dishes and let him know that we need to keep items in their place and then he was okay. He does a good job just slower on dish and it was not busy enough for him to have the dish area that stacked with items through the shift in my opinion. Just something to keep eye on.
Roxana, Jose and Evan were in marsal. I put Evan there as he is wanting to work more in summer and he is great at pounding and can top so wanted him to work with Jose and Roxana and see how marsal is. I let him know that we are going to start training him on down time in other areas so that he can pick up or work different shifts to get hours in summer time. Great kid and did well in marsal! Roxana is a beast and does a great job and really love her in marsal. Jose did well and made sure that pies were looking good!

We gave Silvia a going away gift today from Homeslice! I gave Bo a shirt as I thanked him for dealing with parking lot issue with the dump and he was saying he needs work shirts so I got him one! Bo is really great foh and glad he's apart of the team! Him and Alex are always asking if I need help if they see me doing something and I appreciate it more then they know! I also told Ideal the stair detailing he did was great!
worked with Estela and Mateo on pounding and really great to see them wanting to learn and be good!
Dish machine was down but Lana called autochlor and they came out and it was fixed.
