5/26/23 BOH PM CG FRIDAY
Notes about the shift in general:
Shift started being steady from 630pm-9pm but then was not too steady. Not anything going on around in the area. There are graduation parties and end of summer parties going on this week and next week though so we could get hit!
Next shift be on the lookout for:
continue to monitor Sicilians as we are still leaving them out overnight and they are rising sooner then normal so lets continue to keep our eyes on them!!!

2. KMOD stuff:
Make sure we are getting waste sheet done and up on board.
3. Food stuff:
We had enough for the pm shift but we are going to need anchovies. I will call Raymond in am and I can swing by and drop off some when specs opens at 10am.

People:
Dough/Dish: Meredith did a great job at finishing up dough. Lino and I finished off Sicilians tonight.
Prep: Eli and Ana did a great job and finished up the lists.
Z1R:Evan pounded great and kept up. He usually has Ideal as well to help pound but with Idael out tonight he did a great job!
Z2R: Lorena ran toppings and did a great job! She is really solid on topping and her speed has picked up quite a bit!
Z3R: Gabino loaded pies and did a great job! He is solid at loading
and making sure oven does not get overloaded and drop temp. Rubil did good with slices other than putting one pie in a box with wrong name he did well on roto.
Z1M: Jose Perez did great and held down pounding out pies and
came to back and helped out when Evan went on break.
Z2M:Estela was topping up front and did a good job!
Z3M:Roxana did great. I did have to toss a few slices that she had out as they were not up to standard so we just need to keep eye out on that!
Z4M:
Sub/Salad: Jordan did a great job and did not burn anything! He kept up with tickets and hit his times tonight!

8. Repair issues:
Dish machine which is a work in progress still and Hobart mixer is good. Tech put grease on it and all is good. We also got shown how to do this and we have the correct grease to use on mixer.
The stuff about the stuff:
Notes for FOH: There were 3 overbookings through our pop. We hit the times just wanted to note as at one point I counted 6 pies at 8pm and when I looked at time sheet there was one slot still open. Just need to make sure we are hitting time slots for pies. Other than that only two tickets with no times on them. There was one pie that was given out to wrong person so we had to fly a pie for that one. There was also an extra Sicilian pie put on an order that the guest said they did not want or order. There was also a pie that got thrown away due to wrong name on box and expo had no clue where it went.Rubil just tossed it. Bryan let me know that he has done that before so we need to watch him. (next time get with KMOD as it was a needed pie put in wrong box so another pie had to get flown due to this as well so let Rubil know to box up if expo does not have ticket for it and we will find as we do not just top pies to top them. )Great attitudes in foh and everyone was moving!
