Notes about the shift in general: 

The shift started slow and then started to build. We had a sustained pop that ketp us busy. We had a salad that ran approximately 5 minutes late. We had two slices that was not heated enough for the guest. Leo had a large order with 5 salads and 6 subs that went out on time. A large dough prep was completed by Jose and Gerardo.


All invoices were scanned and uploaded

Market Alerts

Tomatoes are short as the south wraps up for the season. Quality and supply will be an issue over the next few weeks regarding all tomatoes.

Garlic is in light supply

Onions medium is in light supply

People:

Sub/Salad: Leti did what Leti does and kept up with a big rush of tickets.

Dough/Dish:  Bailey completed the last two dough makes on the list by himself. I told him that we will follow his dough all the way to the oven for the next couple of days and see what the final product is like.  

Prep: Ana and Juani did very well completing the prep list. 

Z1R:  Pero really pushed to keep the tickets on time and moving                                                                                                                                                                         

Z2R: 

Z3R:   Will was really on top of rotoflex.

Z1M:

Z3M: Edwin did very well at marsal. 

6. How did you show love?

 I gave Leo a verbal high five for keeping tickets on time

7. What did you teach someone today?

I worked with Edwin at Marsal on oven management.


8. Repairs: 

We are still waiting for the final repairs on the dishwasher internal rack

Notes for FOH: Only a few slices were waiting. One salad went out without the slice. When I saw the check still at marsal I went to find out why and I was told that the salad was sent out some time ago. The slice was prepared and deliver.
