Notes about the shift in general:Clise
It was a slow steady shift with a small pop. I was able to spend most of the time on the rotoflex line and still spend time with the prep and marsal team. We had three fly pies due to missed toppings and over cooked. We had plenty provolone on hand for the shift. Stela did very well on the sicilian dough press and I am looking for a good rise for the morning. I followed up with Bailey's dough prep and they did better. With the heat advisory for the rest of the week, I don't believe there will be many brave souls wanting to sit on the patio. We had a nice pop at close with pizzas, anti-pastas and subs. Everything went out promptly. Overall it was a calm stress free night.Next shift be on the lookout for:

On Joshua's (new employee) next shift, he will be spending more time at marsal3. Food stuff:
The slice quality and salad dressing check was very good4. Sales for the shift: $4,556

People:
Dough/Dish: Bailey maintained the dish pit area all shift. Stela completed the dough list and pressed the sicilian early
Prep: Ana did very well and completed the prep list ealry, so she was cut early
Z1R: Ronaldo did very well pounding for both marsal and rotoflex.
Z2R:
Z3R: Jose was on point with rotoflex, catching a missed topped pie before it made it to the rotoflex
Z1M:
Z2M:
Z3M: Roxana was all over marsal baking off pies, cutting and selling slices
Z4M:
Sub/Salad: Jordan did well at at sub/salad. I encouraged him to focus on his station readiness as soon as he arrives.

Notes for FOH: The FOH did well keeping up with the pops. Ryan and Geraldo demonstrated great leadership and calmness under fire.
