Notes about the shift in general:
The shift started off busy. When the volume became to busy Pies were taken to rotoflex to be baked off. At the same time sub and salad also was busy. Later in the shift it was a struggle keeping up with slices so I started baking XL pies out of the Rotoflex.
There was some misunderstanding on dough prep. The prep chart that I placed above the prep table has been removed. I was informed that it was replaced but it has not been. My printer needs more ink so I will print it and replace it tomorrow. I sent a copy of the dough chart to all k-mods
Roxana and Idael are getting better at marsal but they struggled tonight. It was the sudden pop that got them a little behind. Once the needed pies were prioritized they we were able to get caught up. All cooks were able to take breaks. All cooks clocked out at or before their scheduled time. There were a few closing items left to be completed, but I was able to get them done.
Next shift be on the lookout for:

2. KMOD stuff:
Please follow up with ensuring that sub/salad is compliant with the build on subs, lettuce 3 oz for 6” and 6 oz for 12”. I had Lorena demonstraight the correct sub build.
Please do not allow Alsco to leave more cleaning towels Friday. I have relocated half of the towels to the manager’s office to help identify our current usage. We have enough until our Tuesday’s delivery. This will help Ross and I to identify cost saving PARs. We will need micro fiber towels.
I will call Autochlor for more window cleaner chemical and QA. All dispensed chemicals have been moved up stair to the cage.
I discussed a while back about close to open, It is more important now than ever. I set up everything up for sub/Salad to be ready to go.

3. Food stuff:
There were a few late pies and slices, so some pies were moved to rotoflex.
Meredith was trying to assist with preping diced tomatoes for pizzas and used the salad spinner instead of letting them drain in the large draining container. The batch had to be discarded

Notes for FOH: We had fly on salads and pies that were adderssed right away. There were some demanding guests that challenged the FOH regarding orders.
