Tuesday 8/30/23 BOH PM Lana

Notes about the shift in general:

 it started off pretty slow but things picked up around 8. at first i was knocking out some prep and then i got pulled onto the line through the rush and soon after we started running breaks. gabino and ronaldo are really getting a handle on marsal as a 2 person full service station. gabino struggles a lot with keeping up with slices. longest slice wait time today hit 11 minutes. He just about never worked marsal until last week so, hes learning quick and i have no doubt he will eventually get the hang of it. we should be making sure that they are setting up the station for success though. ill re-post the picture again about how the line should be set and ill make sure to go over it with am people as at night were having to reset it.



ricotta should be up top on ice and mushrooms should be up top as well

other than that, the close was pretty slow as i had to finish up with cookies and making rice krispies and i honestly couldnt help much. we will be getting out around 1

Next shift be on the lookout for:

theres a lot of 911 prep items i just couldn't get to. we'll have to make sure that Ana is completing as least close to as much as dina is completing on a day on days where there is no pm prep

sicilian for tomorrow looks promising. we got cookies made and rolled and they're up in the freezer. id love to get ahead of these and get another recipe made tomorrow

i thing the team of gabino, ronaldo, and loreana is the strongest when it comes to these week days nights

Z1M:ronaldo really is pushing the envelope and getting better everyday. hes topping faster and keeping up with pies well

Z3M:gabino is catching on fast to marsal and is doing it with a positive attitude, but he needs to know when to ask for help. i jumped in a couple times to help and he was appreciative. he needs to learn to ask is all

Z4M: 

Sub/Salad: lorena kept up with boxes and ran things up to the station when possible. she came up to help top when she could


6. How did you show love?

let the team know that they did much better this week and that im proud of them

7. What did you teach someone today?

i taught bailey how to make cookie dough. he says hed like to go over it again next time we make it

i think things are moving along well but we need to focus on

1. getting the team to weigh cheese

2. making sure that the team is setting themselves up for success and also their peers

3. making sure that we are all on the same page about things. thers a lot of "raymond likes us to do this" and cynthia, said its this now" :"wendy said were not doing this anymore" its a bit hard to keep up


Notes for FOH:

things were smooth. running pies to expo when its too busy for us is much appreciated.

its always a great shift with Gerardo around keeping people in high spirits
