Notes about the shift in general:

Shift was slow, i try to keep myself busy, i organized the dough cooler, i did my line check, i send everyone on break around 7, everything was good and well done, i try to keep everyone busy too, Meredith try to came in early but she was gonna hit overtime so i didn't let her, and because it was not a lot to do i let her go around 8, they finished the dough list, they just had to rotated the sicilian thats why i let her go. 




Next shift be on the lookout for:

i think the first thing in the morning we will need it Ricotta.

we have to check for they to put the clean towels in clean container but not to be around.

sicilians were looking good, i just had to keep an eye to Mateo cause he was cocking the house pies till they were looking ready to go.
