Notes about the shift in general:

 It was a slow shift, but we were able to get prep completed. When sales were a little slower Juan came back to complete some prep. Leo was able to complete prep items fpr sub salad. We are trying out vacuum sealing oregano to prevent waste. At $12 a pound, we have to find ways to prevent the waste.

3. Food stuff:

Houston Deli order was placed. I reduced the pepperoni on this order to help control food cost. We have enough on hand to meet projected sales.
