Notes about the shift in general:

 It was a good close last night. The shift started with three deferred orders. All orders went out on time. The shift also had a thirty cookie order that depleted the on-hand count, so we had to lower the temperature of the top marsal oven and bake some more cookies. The rest of the shift was steady with good pops.



Next shift be on the lookout for:

We had to trash two cases of mushrooms due to spoiling. This is an opportunity to look at product mix and the necessary adjustments.

Notes for FOH: The FOH was rocked, and they really stepped it up. The second round of cookies needs to be rapped as soon as possible to retain freshness.
