Notes about the shift in general:
It was a very good close. A lot of detail cleaning was completed. The shift started very steady. I moved Ronaldo to roto line to help with the large order.All BOH was able to take breaks. I spent a large percentage of the time on dough prep.
Sicilians were very good and salad dressing were approved.
Next shift be on the lookout for:
1.How many pies did we run on the timesheet?
