Notes about the shift in general:

 The shift was steady from 4:00 p.m. to 5:00 p.m. and then we had a pop. Sicilians were selling quickly. We started breaks early as soon as the pop slowed down. Pies were coming out on time and looking good. Wendy assisted some of the cooks with their health insurance process.


Estela was cut early from prep and the cooks were assigned prep duties during the slower time. Some of the cooks completed the survey

Notes for FOH:

The FOH did well during the 5:00 p.m. pop. The question about ranch came up again and we will address the matter this week. The FOH is concerned about meeting the set PARs and the FOH is concerned about food cost as it relates to waste.
