11/27/23 Sunday AM BOH CG

Notes about the shift in general:

 

Weather was cold and no sun out at all this early morning. Not alot of traffic out either(not seeing the big church crowds early like normal). Parking around area not bad at moment as nothing going on. Breakfast Klub seems a bit slower for a Sunday for sure. Picked up a bit right before noon but nothing big. Got a few pies and slices from some families that came in. Still have not seen any church crowd today. Very slow. Wendy got in at noon and she is going to make lemon ice so we will have that in next couple hours ready to go. It has been put on 85 slack line at moment since we are not stocked up on it. Eggplant is still on 85 list as well but we should be able to make it through today with what we have. It will be close though. I also will be in earlier tomorrow and get inventory into spread sheet first thing. I am opening with Ross tomorrow so I am coming in before that to do inventory as Lana is out until tomorrow and with trucks coming in that way she can focus on shift and not have to deal with inventory! 


Next shift be on the lookout for:


I would really like for us to monitor eggplant. Not sure if we burnt some one day or over prepped it or what happened but we need to watch and make sure as this is not a item we go through alot of and I do not order tons of bc it will go bad if I stock pile it. Let's just be watching when this is prepped and baked off.

2. KMOD stuff:


Gerardo was the only one on my am shift that had to take the manager survey which he did. We do need to get with our boh and make sure that they deny or accept the insurance for 2024 by Wednesday this next week! Stacy will also be down to answer any questions but we need to get this done. 

3. Food stuff:

I had to throw out some Roma tomatoes and some prepped turkey that was out of date but I have put on waste sheet for the day along with any waste and food for employees in am shift. It is on cork board downstairs next to assignment chart of boh.

Made sure to run breaks as early as I could since I knew guys were hungry this morning. Also told them that the house pies looked great!

8. Repair issues:


We need to move bug light from dough area to another area of boh. I believe this is the last thing to be done for health inspector. He will be back in march 2024!

The stuff about the stuff:  


I am going to go buy Kosher Salt after work as we have enough for today and tomorrow but BEK has been out for the past month now so I will get with Kim from BEk tomorrow and get that here this week but I will grab a box for us to make it until then!

Notes for FOH: Seeing great attitudes up front! Really great to see everyone on top of guests and making sure everything is good for guests. Did not see any mistakes from foh or issues. Only issue they did have was a printer that was acting weird and wouldn'tprint but I went down and got it going once Josh came and got me. Josh doing really nice job of managing foh this morning. Seems really on top of his shift, NICE JOB!
