Friday 12/29/23 AM BOH CG

Notes about the shift in general:

 

Very slow shift in boh. There was a slow little walk up of slices but nothing overwhelming. See a good amount of people on the street so people are around. No deferred orders to start with this morning and there is one for 2 pies later tonight that is printed out on roto line. Sicilians were not pulled out of dough cooler and so I pulled them right at 7am but by 9am they were sat infant of marsal and at open we moved them close to Roto. They are starting to look better and baking off more like what we have been getting. Just need to remember to leave them outside in boh as the first bake off was very flat. Second round bake off really nice and fluffy and airy. Good taste. We got in our orders from BEK and PFG. SOFO is having to deliver our flour and fresh sliced mozzarella and feta Saturday am. It should be here by time we get in at 7am. We have enough bags of flour for today but we need the flour from sofo. We also need to watch eggplant and chicken as I did not order crazy on those. WE have them we just need to keep watch. When I get in tomorrow I will see how we are sitting on those and if need be I will go grab from will call at PFG. 


Next shift be on the lookout for:


just watch usage of eggplant and chicken. We have just need to make sure we aren't burning and tossing out. WE have been going through alot of eggplant and we do not sell it at the rate we go through it so lets make sure we are watching it cook off and putting on waste sheet if we do mess up cooking it.

Let's make sure we are using our down time and getting ahead as nights have been busier. Also need to run breaks and if they do not want to take they risk chance of not getting as we honestly do not want to break the last hour as we should be focused on our last guests coming in and getting ahead of closing procedures that we can be getting done.

6. How did you show love?

 Told Leo his subs looked great and also made sure to start breaks at 11:15am and was done by 12:15pm.


7. What did you teach someone today?

Mettler taught me and Ross that Uber eats scheduled orders do not get put in until it rings again and only door dash

scheduled orders get put in right away! Ross added to line up and we will make sure foh knows.

8. Repair issues:

Back door handle is rough. Still locks just need to look at and see what we can do.

The stuff about the stuff:  


We need to just monitor with college football games in town we need to make sure we have plenty of product.
