Notes about the shift in general:

 Very slow when I got in but we did get a good pop from 5pm-8pm that was pretty solid booking out. We were overbooked about 4 Times tonight but I did let Ryan know and also let him know that we would still get them out on time as we stayed ahead of times so the overbooking was not a hard push but definitely something to continue focus on in foh as if we were not booked out it would have been a huge wrench in the roto line. But everyone worked together to push. I jumped from topping to salad to help Leti as she got hit hard for a bit during our pop. After 8:30pm it was slow again. I cut Meredith by 9:50pm and helped close down roto line and boh. I also let Estela go at 11pm as she is opening prep tomorrow. All and all good shift.

2. KMOD stuff:


I will be by in am with items I feel that we might need to get through Monday until deliveries hit on Tuesday am.

All looking good. Just need to continue to watch Sicilian as with the weather it has been a struggle this week. Lets make sure we are making sure boh is not freezing when we leave but also not a sauna

Dough/Dish:Bailey (Meredith helped out so that we could get Sicilians

done and she got Bailey caught up on dish and then she prepped up her desserts for tomorrow morning. She then came and helped through the pop and then I had her start cleaning some items down to keep us ahead and she was out before 10pm.

Prep:Estela, she finished and started cleaning the boh and then I got her out at 11pm as she opens prep tomorrow.

Z2R:Gabino- awesome as always!

Z3R: Carlos-did awesome and caught miss top before it got put in oven! It was not an easy ticket to read and he caught it!

Sub/Salad: Leti-did amazing and I only jumped on for a bit during pop. I did push subs for about 25 minute times for about a hour then took back to 15 minute.


6. How did you show love?


Bought shifties for the foh team as they did a great job handling the pop! They did over book but they were very responsive about it and great communication!!!

7. What did you teach someone today?

None that I know of. 

The stuff about the stuff:  


I took everything out of roto and its in prep cooler as I do not want to take the chance of it going off and us losing our product. 


Notes for FOH: Good communication and great attitudes! Did have 4 overbooking

but other then that only other thing that happened was 3 times a orders got put in twice so definitely need to review the door dash vs uber with scheduled orders.

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Tuesday 3/12/24 BOH AM Lana

Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
