Notes about the shift in general:
It was a good close with all food product online moved to the dough cooler. None of the GFIs were tripped and all units were operational. All food stored in the coolers were checked for quality and the labels checked for expiration. We had a BOH meeting schedule for the morning so I got ahead and cooked off eggplants. The corrections made to the method of cooking eggplants have provided a better quality product. We are working with the team to ensure that we are getting the best possible product with our eggplants.
While checking in the truck order I noticed that there was a substitution made for our standard paper plates. I discussed the substitution with both Mettler and Cynthia and it was explained to me that the plates we are currently using are part of our approved standard. I sent notification to our vendor representative and informed her that we could not use those plates. The plates will be returned and we will receive credit for three cases of paper plates. We also received two broken tubs of ricotta that we will also receive credit for. I placed the Houston Deli order for tomorrow and we should be fully stocked for the weekend.
The shift started with two orders. There was a 10 pie order for 11:00 a.m. and a 8 pie order for 11:15 a.m. I was asked if we could accommodate those orders before they were accepted and I said yes. I was also informed that they were available slots for the orders. The only caution I have accepting early orders is that the time slots does not take into consideration the house pies that have to be made leading into the opening. I took the House pies and moved them to the marsal, allowing the roto team to focus on both orders. Sales were consistent throughout the shift and there were no overbooking brought to my attention while at the marsal. There was one order that was placed for the wrong time so we fly pie the order and gave the person picking up the order two free slices. We also had one slice order for meatball and I was surprised to find out that a non special slice could be ordered outside of the appropriate date. I was under the impression that the special of the day for slices was available only on the designated day in Toast.
I placed a follow-up call to LES regarding our questions about our grease trap retrieval. I was told that they did not have any record of the communication that I sent to Ms. Green. I provided additional information and ask them to check again and the information of my communication with Ms Green was documented on their system. I informed the customer service representative that we were waiting for a response from their Area Manager regarding all concerns. 20 minutes later I was informed that the representative would have to forward my question on and someone will get back with me. I will follow up again with LES and provide further information
Taking a close look at the sales by hour, you can see the following:
The shift started with with two large orders and stayed consistent until 2:00 p.m.
Breaks started at 12:30 pm and all of the BOH was able to take breaks
Labor was high due to the BOH meeting

Please continue to monitor the quality of red peppers. There was a case sent back today because they were multicolored
All cookies were approved and came out looking very good
Eggplants that were cooked off also came out very good

Short-term outlook: The market is unstable, and price increases are expected to continue into next week.
Longer term: The market could decrease in late February. However, we should still expect March to bring overall higher price points than YTD.
Due to weather or delays at the port the items below will affected by shorter supplies, fair quality and higher prices-

Midtown, please be on cautious alert regarding these items. Please be on the lookout for any poor quality products.
Food Pricing Awarness: This is just to be mindful of food cost and not intended to deter us from having an adequate supply on hand. Again, just be aware when receiving these products we should not accept anything but the best quality possible.

Dough/Dish: Gerardo/Jose were able to complete the Dell prep list and maintain the this area.
Prep: Dina didn't completed her prep list and she left on time. Dina usually works with a sense of urgency and we've not had any problems with her completing her purpose.
Z1R: Juan did very well to complete both of the orders and stay consistent throughout the shift ensuring that we had on time tickets

Z3R: Will Bill did very well at Roto and also did well and completing the orders

Sub/Salad: Leo did well completing all-time orders at sub / salad. There were no late orders brought to my attention while it marsal

I gave the Roto team a verbal high five for completing the early orders on time.

The stuff about the stuff:
Notes for FOH: The FOH did well. There was only the fly pie order and the incorrect order for the meatball slice during the shift.
