Notes about the shift in general:   When I got in at 2pm there was a good amount of guests headed to breakfast klub but we were not busy. We had a few tables but nothing crazy. Had some guests come in but again, we did not get busy. No big orders for this evening. Weather was nice and not hot outside at all. Suppose to rain but we will see. Parking around us was a nightmare. Around 4 seemed to start having some tablet and phone orders. Did have some calls earlier in day to see if we are open tonight. Picked up a bit around 7ish after astro game let out, saw some jerseys but not alot. Did not get hit with walk ups but good pop walked in tonight. Phones were ringing and we were steady in the back from 6-8ish. I was able to get everyone breaks by 8:15pm so we were set to go on that. Not much happening up in marsal, more whole pies and calzones being ordered. Salad station got hit with subs and salads through pop and I jumped on a bit and helped leti once I was able to pull from toppin...

Notes about the shift in general:  On the way here it was a little bit of traffic, for a second i though i was not going to make it on time, but i did, weather was really good, i thought it was going to be a really busy night because of yesterday, but not really it was just consistent, Lana and i got it majority of the time, Juan Carlos was on the line with us but i had to send him to Marsal because it was not really a lot to do, Meredith was called in to help, but she wants really helping, she was constantly leaving to go to the restroom because she wasn't feeling good, so i send her home, and it was pretty much just us on the line, it was some rush moments but they were really small, today Leti didn't even ask for help, because it was not super busy tonight, we had Roxana and Danilo leaving at 12:30 because that's the time they got on the schedule and only Carlos, Gabino Bailey, Leti and Juan Carlos to closet, witch for me was more than enough people, Roxana got everythin...

Notes about the shift in general:   When I arrived the weather was a little cool, but tolerable.  During my walkthrough I found that all GFIs were not tripped and all coolers were at the correct temperature. All stations were clean and food product was stored in the walk-in.  I did not have a problem with the alarm, so I believe  that the problem has been corrected. The only missed opportunity was bringing down tiramisu, cheesecake and sub bread. We had very little dough waste, which was good to see. All roto line temperatures were at the appropriate temperature. In the past we used to remove the chill rail covers. We are now leaving the the covers in place so that we can better control the line temperature. The line temperature has been a little off. The cooks will now close the lids when we are experiencing slower sales, food safety first. The produce truck was late today. There was a new driver.  The order was FIFO’d and red peppers are looking better . ...

Notes about the shift in general:  It was not a lot of traffic today, i think is because kids are out of school today, so that made me thought that we were gonna get busy tonight, when i got here tickets were consistent, but around 6 we started to get busy, Carlos and Juan Carlos were helping on the line, Juan Carlos had to go back to the front because they were kinda busy too, Salad station definitely got hit tonight, i had to stay helping Lety for more than an Hour, we almost got out of romaine cut for the salads, but Alis prep some really fast, and we didn't got sort on anything, a lot of labels were change tonight at the line, but we have check labels tomorrow morning because i wasn't able to check the ones on the coolers, it was a busy night, and i think that's better to get done in the morning when we are doing prep list so we can check on the quality. Next shift be on the lookout for: I didn't saw anything in specific, everything just seems to be able to get done...

  Notes about the shift in general:  it was a good start to the shift. we were set up pretty well. we were a bit low on. we were able to keep up with things for the most part. they didn't need a whole lot of help in the line aside from running breaks. they did well especially keeping up with house pies. we did have a whole lot of roto pies in the line. Notes about the shift in general:  it was a smooth hand off. Raymond went on our weekly specs run and picked up anchovies. he also got some red bells from the store. He let me know that the prep list was long this morning so she didnt quite complete it. i made a small prep list for myself to dive into just to get the shift started. the shift itself was a busier one. we had a few good rushes on roto. we struggled a bit to keep up while running breaks but things didnt slow down until the end of the night ad then slices got hit towards the end. we were selling slices till almost 11:30. all and all it was a great shift.
