SATURDAY, APRIL 27 2024 BOH PM WENDY

Notes about the shift in general:

 Starting the day with a lot of traffic, this week we have been with more traffic than usual, so i decided to leave my house and hour and 40 minutes early and i was able to get here on time, just walking in i saw the orders for later, one at 5 with 12 pies and another one at 8:40 with 23 and pies, Cynthia keep me posted about this morning shift, she communicate with me all the stuff she had to bring in this mornings, just for tomorrow she would bring more cream cheese for the desserts, so Meredith can start with the cheesecake mix for Monday. Shift started good, we try to check on everything making sure we would be okay for the orders later on, around 4 we started making the order for 5pm, we got ready with pizza cutters because they were double cut, and some of them were sausage ricotta pies and we didn't wanted to get a mess, we made one extra in case we had to make it, but we didn't, because everything ended really good, and on time, Pedro was here till 5 so that help us pushing through with the order, on prep it was not a lot to do, it was no 911 other than carrots, everything else we were good until she prep them, i had to prep more cherry peppers because we only had half of container left, so i made 2 more and we were good for the rest of the night, i started breaks around 6:30 because at 7:30 we were gonna start with the 23 pie order, at that point we were already kinda busy, tickets were consistent so try our best to took some orders out a little more early so we could have space on the rack to put the pies, we started getting ready all the team did a really good job, and we started with the order we were done, and when we thought that was it we had a whole line of tickets waiting for us, so when we started at 7:30 we didn't stop till 10 pm, around 8:15 we started to bake all the pies and they were all done around 8:25 - 8:30 and leaving the building at 8:40 everything came out really good, everything was looking nice, we didn't fall behind on any pies for the whole shift, oven stayed at a good temperature all night, i was honestly scared for the temperature to drop like it used to do, but they guys are doing a lot better on rotation and keeping rotoflex in good temperature, around 10 pm everything got a little slower, so we were able to recover from all the business we had, and restock everything organized stuff, and made our areas look clean, salad station was really consistent too during the whole night, but Leti was able to handle everything, she didn't had to call for help, the whole time she had everything in control, same with slices, Juan Carlos and Roxana does a really good job working as a team, whenever they were getting slow on slices, Juan Carlos was coming to the line helping topping or pounding.


 


Next shift be on the lookout for:

We were keeping an eye with meatballs because that is all with have till monday, but we did pretty good tonight, we didn't went trough a lot of meatballs so we should be good for tomorrow.

2. KMOD stuff:

I been getting complains about Bailey not coming to get any dishes from the line, normally i don't pay attention because im just trying to help went through with tickets, but i decided to pay attention today, because in 2 different occasions they try to tell Bailey if he could took the dishes and he was just looking at them and walk away, so tonight i decided to keep an eye on that, and he only came to get dishes one time the whole night, and that was because i told him to and he got a upset when i told him to, i don't know if he is not supposed to anymore, or why he doesn't do it anymore, also i try to explain to him and show him how to do the pressing on the sicilians, because the usually ended flat in the middle so i told him not to make any pressure in the middle when he is trying to make them touch the corners, i let him do one the way he does it, and 1 the way im trying to him to do it, and he saw the difference on how thinner  it feels in the middle with her way and how more even feels they way i do it, so i hope they ended up better tonight.


3. Food stuff:

Sicilians were looking thin in the middle, not a lot them were touching the corners, one had a whole in the middle so we had to throw it away, dressings were approved, same with pizza sauce, slices were looking good, nothing on the fly.

Z1R: Evan, Evan help the most on topping, he did really good, he is getting faster on topping, Danilo he did a really good job keeping up on all pies, it was a no stop, and he didn't give up for a minute, we did a great job tonight.

Z2R: KMOD

Z3R: Carlos and Gabino, they both did a really good job tonight, they are just experts.

Z1M: Juan Carlos, i love how he is always looking for something to do even though they were getting slow on slices he was always coming to help pounding on the line, great team player.

Z4M: Roxana she always does good, when she is working you forgot you have a Marsal area she is good on what she does.

Sub/Salad: Leti did excellent too, always keeping up with her tickets, she was able to handle everything and always with a smile on her face.

I had a small talk with everyone, they did excellent and i told them i was going to bring them something next week.

Notes for FOH: Great shift, it was a really good communicating with BOH tonight, we didn't had any tickets with no time, even good communication with desserts too, i know Bailey had to help clean up a mess in the hallway, and im glad he did it was a great team work.
