Notes about the shift in general:

it started raining the moment i stepped out of my car and the weather was very off an on through the shift. there were a few hours or rain and a few hours without. it seemed to detore guest at first but as the night went on we saw more business. it wasn't a very busy shift to start. things picked up around 7 and it seemed to be a pretty constant flow until about 9:30 and things slowed down a bit. we definitely had a whole lot of house pies today. slices were going all night and the roto line was good about working those pies in between orders. there was a point when she got really low. this buisness in slices is not normal for a sunday, but we managed fine with roxana up there solo today. pedro was in for gabino today and did well despite not being a normal closer. prep wasnt a super long list and it did get knocked out. meredith got a bit backed up with dish and carlos helped her out with sicilian so that she could catch up. everything seemed to be in a very smooth rotation today.



Next shift be on the lookout for:

We're a bit low on carrots but we should be okay as produce is in tomorrow. 

We are low on meatball but we're prepped up with no back ups. We should have more in tomorrow

Dough/Dish: meredith felt a little behind on dish as she had a wardrobe malfunction and had to run home for clothes. she didnt have a great start because of it but eventually caught up

Prep: alis knocked out the prep list but i did tell her when the list isnt that long, i expect it done earlier than her out time

Z1R: Danilo did well, i did tell him he needs to make sure hes taking trays back to dish if they are piling up

Z2R: evan did well but is still getting used to the supreme and how to make it well

Z3R: pedro and carlos did well together, but they defiently get easily distracted by one another

Z1M:

Z2M:

Z3M:roxana was up on roto on her own. she was good about communicating her need for pies. i spoke with her about not sending out extra crispy slices when its a regular ticket

Z4M: 

Sub/Salad: evelin did good. i helped he catch up 1 time all night but she had a good handle on things

I showed evan and carlos the proper way to make a supreme pizza

8. Repair issues:


A small metal ball came out of roto? I'm under what it is or why, but roto is working fine? Pedro said the same thing happened a while ago when they fixed  it last time

The stuff about the stuff:  

I spoke with Ryan about the confusion with supreme pizzas and the modifications. I'd love to find a way to get things a bit easier next manager meeting

Notes for FOH:

Things were good up front. A couple confusing tickets but servers were good about coming and talking to us about things

 Notes about the shift in general:  When I arrived the rain has not started the downpour, but  minutes after I arrived the deluge started. CG and I spoke about server weather readiness. The alarm did not go off and none of the  GFIs were tripped. It was a good close with all areas clean and organized. All food items were moved to the walk-in coolers.  The produce order was placed for tomorrow. The BEK truck was a little late. Lana and I went over the schedule for nest week and she did very well at identifying areas of opportunity to make bone close cuts. The K-Mods will have to bonce around from Dish/Dough, roto and  marsal on some days. We communicated with the staff about the reduced  hours It was. Wendy completed a quick reference list of closing duties for the BOH. This list was prepared for the FOH in the event a k-Mod leave ill before the end of their shift.   Notes about the shift in general: we had a good set up today and the team seemed ready to work. Raymond and i sat down with an applicant to talk, but ultimately decided against him as he is related to other staff members and we don't feel it would be a smart move. we reviewed other applicant and he did seem to like Vilma so ill get with him about if we could get her started pending her availability. i spent some time filling in on the line and around 7 we started running breaks. we finished running them by 7:30. we had 1 lost ticket pie that we had to fly. it started off really slow and then we got a couple of rushes around 7 and 8 o clock. slices got hit around 8 as well. thing started to slow down around 9. we had a solid team tonight. Tuesday 3/12/24 BOH AM Lana

Notes about the shift in general:  walking in, the close was good. id like us to pay attention a bit more to the janitorial room. Its becoming a consistent missed area in terms or organization. the bathroom also, i had to pick up a bit.   we had a really good start with a lot of people on with dessert and training. i was cautious of this with labor. The guys got started fast as we had that order due at 10:45. Evelyn had to learn how to do the large salads so there was learning opportunity walking in. The large order this morning was just 8 family salads and 9 pizzas. it went out smooth and everything looked great. we had a slow lul for most of the shift and then we got a good push on slices and whole pies that helped a lot     Next shift be on the lookout for: Were set up pretty well. 1.How many pies did we run on the timesheet?  4 every 5 2.
